BH&G HERITAGE COOKBOOK:
2 Beaten eggs
1/2 c Dairy sour cream
3 tb Granulated sugar
1 tb All-purpose flour
1/2 ts Vanilla
1/2 ts Grated lemon peel
2 Egg yolks
1/2 c All-purpose flour
2/3 c Milk
2 Stiffly beaten egg whites
Powdered sugar In top of double boiler combine eggs, sour cream, 2 tablespoons sugar, 1 tablespoon flour, vanilla, and lemon peel. Place over boiling water. (Upper pan should not touch water.) Cook, stirring constantly, till thickened. Remove from over water. Cover surface of pudding with waxed paper; cool to room temperature. Beat egg yolks with remaining 1 tablespoon sugar till thick and lemon-clored. Add flour and milk alternately, beating well after each addition. Fold in egg whites. Drop by tablespoonfuls onto hot, greased griddle, spreading to a 3-inch circle. Cook 1 minute on each side. Place cooked pancakes on paper toweling till all are cooked. Spoon about 1 teaspoon filling on each pancake, roll up, and place in 10x6x2-inch baking dish. Cover; bake at 350 till warmed, about 15 minutes. Sprinkle with powdered sugar. -----

Nalisniki (налесники), cheese blintzes, cheese crepes, blinchiki. It has remained one of the most popular dishes in our family for breakfast, lunch or a late-night snack.

????INGREDIENTS For the Crepes Batter:
►½ cup lukewarm water
►1 cup milk
►4 large eggs
►4 Tbsp unsalted butter, melted. Plus more to sauté.
►1 cup all-purpose flour (you can use ½ cup whole wheat flour and ½ cup all-purpose)
►2 Tbsp sugar
►Pinch of Salt
For the Filling:
►8 oz package cream cheese, at room temperature
►16 oz small curd cottage cheese
►⅓ cup of sugar
►¾ cup raisins
►Powdered sugar for serving (optional)

Ingredients
2pcs Egg
20ml (4 tsp) Milk
30g (3.3 tbsp) All-purpose flour
1.25ml (1/4 tsp) Vanilla extract (optional)
25g (2 tbsp) Sugar
Important tips
1. I used the all-purpose flour in here, you can also use cake flour to make
2. There are 25 grams (2 tbsp) of Sugar in total. Split it into 3 times to add.
3. Whip the egg whites to dry peaks, so the pancakes will come out thicker
4. All the way low heat, about 5 minutes on each side, you can either add a small spoonful of water or not.

How to Make Strawberry & Cream Crepes
Easy homemade crepes with a delicious strawberry and cream filling. You can enjoy Strawberries and Cream Crepes for a fancy breakfast or dessert.
Crepes sound intimidating but they are actually about the easiest recipe ever!
⭐️Ingredients⭐️
For the crepes:
4 large eggs
1/3 cup butter , softened
1/2 cup granulated sugar
1 cup all-purpose flour
1 1/4 cups milk
1 teaspoon vanilla extract
1/4 teaspoon salt
For the filling:
2 cups fresh strawberries , sliced
4 ounces cream cheese
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1 pint heavy whipping cream
3 Tablespoons powdered sugar
⭐️Instructions⭐️
For the crepes:
Add all ingredients to a blender and blend until smooth. Scrape down the sides of the blender if needed.
Refrigerate batter for 30 minutes. (Recommended, but not required)
Heat a large non-stick skillet to medium heat. When skillet is hot, lightly grease it with a little butter or cooking spray.
Hold the handle of the skillet and as you pour a few tablespoons of batter in, tilt the skillet around in a circular motion to allow the batter to evenly coat the bottom of the pan, in a thin layer.
Cook for 30 seconds-1 minutes or until the edges of the crepe curl slightly and the bottom of the crepe is lightly golden. Flip to the other side and cook for another 30 seconds.
(Adjust your heat between medium-medium high until your crepes are cooking in about 30 seconds on each side. Re-grease your pan every few crepes, as needed.)
Remove crepe to a plate. Add more crepes to the plate as you cook them, and cover the plate with tinfoil to keep them warm.
For the filling:
In a small bowl mix together the cream cheese, powdered sugar, and vanilla until smooth.
In another mixing bowl, beat the cream and powdered sugar on high speed until stiff peaks.
Spoon most of the whipped cream into the cream cheese mixture and fold in until smooth. Reserve a little bit of whipped cream for topping on the crepes, if desired.
Spoon a thin layer of the filling into on a crepe. Add some fresh strawberries on top and then roll it up.
Serve sprinkled with powdered sugar, extra strawberries and whipped cream, if desired.
