1 pk Lemon cake mix; 19 ozs 1 c Ricotta cheese 3/4 c Sugar 1/2 c Oil 1/2 ts Cinnamon 4 Eggs 1 ts Vanilla 1 c Milk Maraschino cherries; optiona Preheat oven to 375 degrees. Combine cake mix, oil, eggs and milk and blend thoroughly Pour into two 9-inch round layer pans or one 11x14-inch pan. Bake layers 25 to 30 minutes, and the rectangle at 30 to 35 minutes. Cake is done when it pops back after being pressed lightly with a finger. Let cool. Blend ricotta, sugar, cinnamon and vanilla; mix well. Spread over cooled cake. Dot with maraschino cherries for color, if desired. -----

CANNOLI CREAM RECIPE
Ricotta Cheese, impastata 4 lbs. 8 oz. Sugar 1 lbs. 8 oz. Vanilla 1 Tbsp. Cinnamon oil 2-3 drops Chocolate chips 4 oz.
Total yield: 6# 4 oz.
Method: • Make sure to measure all your ingredients and gather all equipment before starting • Place tabletop mixer with paddle attachment on work area, then place the impastata cheese into mixer bowl, mix the cheese on 1st speed to combine and smooth • Add granulated sugar next, allow to mix in completely and dissolve, the texture will now change to a smoother consistency • Next is the vanilla, cinnamon oil, and chocolate chips (optional: if you don't want to mix in the chocolate chips, you can use to sprinkle at the end, but we always have chips in our Cannoli’s) • Once all ingredients are added mix only until incorporated, place in pastry bag and into the refrigerator until ready to pipe and serve.

Cake: 6 large eggs 1 cup white sugar 1 cup flour 1 tsp baking powder 1 tbsp vanilla extract
Filling: 1 cup heavy whipping cream 15 oz ricotta cheese 8 oz. mascarpone cheese 1 cup powdered sugar
3/4 cup mini chocolate chips
2 9 inches pans Bake at 350F until firm in the center
