How To make Cantaloupe Chiffon Pie
1 md Cantaloupe; ripe
Peeled and seeded 1 Unflavored gelatin
3 Eggs; separated
3/4 c Sugar
1/2 ts Salt
1/4 c Fresh lemon juice
1 c Heavy cream
Baked graham cracker -crust/9" Shred fine or puree in a blender half the cantaloupe or enough to make 1 cup pulp. Put in top part of small double boiler. Soften gelatin in the pulp. Add slightly beaten egg yolks, 1/4 cup sugar and the salt. Then cook over boiling water, stirring constantly, until thickened. Add lemon juice and cool. Cut remaining half cantaloupe in small cubes and add to cooled mixture. Beat egg whites until foamy and then gradually add remaining 1/2 cup sugar and beat until a stiff (but not dry) meringue forms. Whip cream until stiff. Fold meringue and half the cream into the cantaloupe mixture. Pour into crust, decorate top with remaining whipped cream and chill until firm, about 3 hours. This pie should be served the same day it is made. Makes 1 9-inch pie. JM -----

그린 색감의 청량함을 느낄 수 있는 멜론 젤리 케이크를 만들었어요~
멜론을 반구 모양으로 얼려 화이트 초콜릿으로 무늬를 내 멜론처럼 만들어 장식한게 진짜 멜론 같은 느낌을 주어서 재미있는 것 같아요~^^
멜론 과육 층의 색을 다르게 굳혀 더 상큼한 느낌이 나네요~
탱글 탱글한 젤리의 느낌으로 먹어도 맛있고 냉동실에 얼려 먹어도 시원하니 좋더라구요~
중간에 하얀 층은 멜론과 잘 어울리는 요거트 무스를 사용했어요~

▶틀 사이즈 Mold size : 7cm x 7cm 2개 분량
▶재료
멜론 150g
설탕 20g
판젤라틴 3g
버터 비스킷 35g
녹인 무염버터 15g
플레인 요거트 45g
설탕 25g
바닐라익스트랙 2g
판젤라틴 2g
50% 정도 휘핑한 생크림 90g
따뜻한 물 160g
설탕 30g
판젤라틴 5g
▶레시피
1. 멜론, 설탕을 믹서기에 넣고 간 뒤 전자레인지에 30초 정도 돌려 따뜻하게 데우고 불린 판젤라틴을 넣고 섞는다.
2. 실리콘 반구 몰드에 붓고 냉동실에서 2시간 정도 굳힌다.
3. 부순 버터비스킷과 녹인 무염버터를 섞은 뒤 틀 바닥에 꾹꾹 눌러 깔고 냉장실에 넣어둔다.
4. 플레인 요거트, 설탕, 바닐라익스트랙을 섞은 뒤 녹인 판젤라틴을 넣고 섞고 50% 정도 휘핑한 생크림을 넣고 섞는다.
5. 틀에 넣고 평평히 한 뒤 냉동실에서 10분정도 굳힌다.
6. 따뜻한 물에 설탕을 넣고 섞고 불린 판젤라틴을 넣고 섞은 뒤 반을 다른 볼에 덜고 그린 식용색소를 조금 넣고 섞는다.
7. 작게 자른 멜론을 넣고 섞은 뒤 틀에 붓고 냉동실에서 20분 정도 굳힌다.
8. 굳은 멜론 층 위에 요거트 무스를 넣고 평평하게 하고 냉동실에서 10분정도 굳힌 뒤 남은 설탕물에 멜론을 넣고 섞어 틀에 넣고 냉장실에서 2시간 정도 굳힌다.
9. 반구 몰드에 굳힌 멜론을 빼고 녹인 화이트 초콜릿으로 무늬를 그린다.
10. 무스 틀 겉면을 스팀타올로 감싸 살짝 녹이고 틀을 제거한 뒤 (9)를 올려 마무리한다.

Kabocha Japanese Pumpkin Chiffon Cake | Light and Fluffy Like a Cloud!
Autumn is the season for pumpkin and squash, my favorite being Kabocha! It's a Japanese squash that has a firmer texture than pumpkin and a subtle sweetness reminiscent of chestnut and sweet potato. It gives a wonderful yellow color to the cake and I like to leave small pieces when mashing for some textural contrast in the soft, fluffy chiffon cake. Kabocha Chiffon
Ingredients
egg yolk 80g
corn oil 45g
milk 25g
kabocha 85g
pastry flour 75g
a pinch of apple spice.
Meringue:
egg white 120g
sugar 60g
1. Prepare the kabocha: Cut the kabocha into pieces and steam for 20 minutes with high heat or until softened. Make sure to set it on a rack while steaming so the juice drains properly. Let cool and peel the skin with a pairing knife. Weigh 85g and mash into tiny pieces with a fork, set aside.
2. Prepare the batter: Preheat the oven to 180C. In a small bowl, add oil to yolk and mix with a whisk. Add milk and mix until fully emulsified (no visible oil floating on top). Add mashed kabocha and mix well with a whisk. Sift the flour and apple spice into the yolk mixture and mix with a whisk. Take care to not whip too much in order to minimize gluten formation. Stop mixing once the flour is completely incorporated, do not over mix.
3. Make a meringue: In a separate bowl, whip the cold egg white on medium speed until big bubbles form. Add 1/3 of the sugar. Continue to beat the egg white until it starts to become white and foamy. add the second 1/3 of the sugar. Whip until finer foam starts to form, add the last 1/3 of sugar. Finish whipping when the meringue starts to have a stiff peak.
4. Mix the batter and the meringue: Add 1/3 of the meringue to egg yolk mixture and mix with a whisk until just combined. Pour the entire mixture into rest of the meringue and fold with a whisk as shown in video. When the texture starts to look uniform, finish with a spatula to make sure the bottom and the side are mixed evenly. Pour the mixture into the chiffon pan and run a skewer in an S shape to remove big air bubbles.
5. Bake: 15min at 180C, lower the heat to 160C and bake for another 15min.
6. Remove from the oven and drop the mould onto the table. Set the mould upside down to cool completely (approx. 2 hr). Remove cake from the mould by first running a spatula between the outer parameter, then the bottom.
Cream Cheese Whip
Ingredients
cream cheese 30g
sugar 10g
milk 30g
a pinch of sea salt
35% whipping cream 100g
In a mixing cup, whip room temperature cream cheese, milk, sugar and a pinch of salt until smooth and foamy. Add cold whipping cream and whip until thickened.
To serve: Cut the chiffon cake into slices and serve the cream cheese whip and apple spice.

プリンは焼き上がったら常温で冷まして、冷めたら冷蔵庫に入れしっかりと冷やしておきます。
▷クレームシャンティ
純生クリーム 80g
粉糖 7g

▶組み立て・仕上げ
プリンスメロン 2玉
※今回のケーキはプリンスメロンの美味しさでケーキの美味しさが大きく変わるので、完熟したジューシーで香りの良いプリンスメロンを使って下さい
1、プリンスメロンを半分にカットして種を取り除きます。
※種を取り除く時にプリンスメロンの美味しい果汁が種と一緒にたくさんとれますが、濾して粉糖などで甘みを調整してメロンジュースなどで楽しむのがお勧めです☆
2、プリンスメロンの果肉をカレースプーンなどを使ってくり抜きます。半玉から3切れの果肉が取れるくらいの大きさでくり抜いてください。
※くり抜く時は果肉をあまり薄っぺらくくり抜くと、後から飾る時に果肉がフニャっとなって仕上がりが綺麗になりません。ある程度厚めにくり抜くようにします。
3、くり抜いたプリンスメロンの器の果汁をキッチンペーパーなどでふき取って、中にクレームシャンティを絞り入れます。(たっぷりのほうが美味しいです)
4、プリンをカップから取り出して③に入れます。
5、プリンの周りにプリンスメロンの果肉を飾れば完成です☆
ポイント:
・今回のケーキはプリンスメロンの美味しさでケーキの美味しさが大きく変わるので完熟のプリンスメロンを使ってください☆
・今回は手作りのプリンを使いましたが、市販のプッチンプリンなどを使えばとっても簡単に出来るので、プリンスメロンの美味しい時期に是非作ってみて下さい☆

This four ingredient No Bake Watermelon Pie is so easy to make and absolutely delicious! The perfect Summer dessert! I have listed the recipe below should you want to make it. Give it a try because I think you will enjoy it as much as me and my family did. Enjoy, Dolores
NO BAKE WATERMELON PIE
1 3 oz. package of Jello Watermelon flavored Jello
1/4 cup. boiling water
1 - 12 oz. container of Cool Whip (4 cups)
2 tips of diced watermelon
1 - Ready Made Pie Crust - Graham Cracker or Short Bread ( 9 inch)
In a large bowl combine the boiling water with the watermelon jello.
Stir until all dissolved.
Allow to cool down.
Fold in the Cool Whip and gently fold in the watermelon pieces.
Fill the piecrust with the mixture and refrigerate for 3 to 4 hours until
set.
Keep covered in the refrigerator. Should be eaten in 2 days.
