Vegetarian Cabbage Rolls (with a Holiday Inspired Filling)
When planning our holiday meal this year, we know that these Savoy cabbage rolls stuffed with mushrooms, onions, sage, sweet potatoes, dried cranberries, and wild rice will be on the menu! They are a great focal point for a vegetarian (or vegan) meal and make an incredible tasty side for a traditional turkey, roast beef, ham, or duck dinner.
Our philosophy is to buy the freshest ingredients we can find, prepare them simply and share meals with our family and friends. Fortunately for us, Ontario grown cabbage, onions, mushrooms, and sweet potatoes are all available locally and in-season in December. They are actually available throughout most of the year!
I choose Savoy cabbage as the star for these cabbage rolls. It is a variety that is mild in flavour, very tender, easy to work with, and it does not hurt that their crinkly green leaves are pretty photogenic.
Growing up, I used to think that making cabbage rolls was a full day commitment because my aunt or baba would make dozens at a time. But when you just make 12, the prep time is minimal and while the cabbage rolls are cooking, it leaves time to wrap a few gifts. Make them a couple of days in advance, keep them refrigerated, and warm them up to reduce the stress of the big day.

Stuffed Cabbage Rolls Ingredients:
1 1/2 Tbsp Oil
1 Onion (finely chopped)
1 tsp Ginger Paste
1 tsp Garlic Paste
1/2 Capsicum (finely chopped)
1/2 cup Green Peas
2 Tomatoes (finely chopped)
Salt
1 Cabbage
1/2 tsp Turmeric Powder
1 tsp Red Chili Powder
3/4 tsp Garam Masala
2 Green Chillies (finely chopped)
Coriander Leaves (chopped)
1 cup Boiled Rice
1 cup Soya Granules (boiled)
1 cup Tomato Purée
1 Tbsp Ketchup
1 tsp Soy Sauce
1 tsp Kashmiri Red Chilli Powder
Salt
1 tsp Sugar
1/2 cup Water

Ingredients:
-Bund gobhi (Cabbage) 1 large
-Boiling water as required
-Namak (Salt) ½ tbs
-Chicken qeema (Mince) ½ kg
-Pyaz (Onion) chopped 1/4 Cup
-Kali mirch powder (Black pepper powder) ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp or to taste
-Garam masala powder ½ tsp
-Olive oil ½ tbs
-Hara dhania (Fresh coriander) chopped 2 tbs
-Olive oil 1-2 tsp
Directions:
-Spread cabbage leaves & set aside.
-In boiling water,add salt and mix well.
-Add cabbage leaves,cover & boil for 5 minutes then take out & set aside.
-In bowl,add chicken mince,onion,black pepper powder,red chilli crushed,salt,garam masala powder, olive oil and mix well.
-Add fresh coriander and mix well.
-On boiled cabbage leaves,add chicken mince,fold the sides together and roll up.
-On boiling water,place steam rack and grease with olive oil,place cabbage wraps,cover & steam cook for 9-10 minutes.
-In frying pan,add olive oil and fry cabbage wraps from both sides until golden brown.
-Serve with chilli sauce!

-Bund gobhi ka leaves alag ker lein & side per rakh dein.
-Boiling water mein namak dal ker ache tarhan mix karein.
-Bund gobhi dal ker dhak dein aur 5 minutes kliya boil ker lein phir nikal ker side per rakh dein.
-Bowl mein chicken qeema,pyaz,kali mirch powder,lal mirch crushed,namak,garam masala powder aur olive oil dal ker ache tarhan mix karein.
-Hara dhania dal ker ache tarhan mix ker lein.
-Boiled cabbage leaves per chicken qeema dal dein aur tamam sides ko fold ker ka roll ker lein.
-Boiling water per steam rack rakh dein aur olive oil sa grease ker ka cabbages wraps rakh dein aur dhak ker 9-10 minutes kliya steam cook ker lein.
-Frying pan mein olive oil dal dein aur cabbage wraps ko dono sides sa golden brown hunay tak fry ker lein.
-Chilli sauce ka saath serve karein!

8 Chinese cabbage leaves
Filling:
7g ginger
4 spring onions
4 cloves garlic
8 mushrooms
2 carrots
1 bell bell pepper
400g minced meat
8 tablespoons cooked rice
2 tablespoons agave syrup
6 tablespoons soy sauce
2 teaspoons chili flakes
Oil for frying
