Cauliflower Parmesan
Delicious served alongside your favorite protein, or presented as a vegetarian entrée with pasta and a green salad, this Cauliflower Parmesan from local blogger, Alissa DiSanto has all the flavor of the original Italian dish, minus the meat.

Cauliflower Parmesan
Serves 2-4
Ingredients
1 large head cauliflower
½ cup olive oil
Salt and pepper, to taste
1 large onion, diced
5 garlic cloves, minced
1 tsp. dried basil
1 pinch crushed red pepper flakes (optional)
1 Tbsp. sugar
1 28 oz. can Heinen’s crushed tomatoes
1 cup Heinen’s Italian bread crumbs
½ cup Heinen’s fresh grated parmesan cheese
1 cup shredded BelGioioso mozzarella cheese
1 bunch of basil, for garnish
1. Preheat the oven to 400˚F. Line a rimmed baking sheet with parchment paper or tin foil.
2. Slice the cauliflower into steaks. If you struggle with this, or several florets come loose, simply cut the cauliflower into florets. Arrange in a single layer on the baking sheet. Drizzle with 4 Tbsp. of olive oil and season generously with salt and pepper.
3. Roast for 30 minutes until the cauliflower steaks are golden brown. Cauliflower florets will roast much faster, about 18-20 minutes. Remove from the oven and set aside. Turn the oven to broil.
4. Prepare the bread crumbs by heating 2 Tbsp. of olive oil in a skillet over medium heat. Add the bread crumbs and stir constantly for 1-2 minutes, or until the breadcrumbs are golden brown. Immediately transfer the bread crumbs to a bowl and set aside.
5. Using the same skillet, prepare the tomato sauce. Heat 2 Tbsp. of olive oil over medium heat. Add the chopped onion and minced garlic to the pan and cook for about 5 minutes, or until the onions are translucent. Add the can of crushed tomatoes, red pepper flakes (optional), dried basil, sugar and a pinch of salt. Allow the sauce to simmer for 5 minutes.
6. Cover the bottom of the baking dish with a layer of the tomato sauce. Top with the roasted cauliflower. Cover the cauliflower with the breadcrumbs, followed by the grated parmesan and mozzarella cheeses.
7. Place the dish under the broiler, watching very closely to ensure that the cheese becomes brown and bubbly, but does not burn.
8. Remove the dish from oven and garnish with fresh basil.

1 Tbsp (15ml) - Olive Oil
Salt & Pepper
For The Béchamel (White Sauce) -
100g (3.5 oz) - Unsalted Butter, Cubed
50g (1.7 oz) - Plain All Purpose Flour
420ml (14.2 fl oz) - Full Fat Milk
420ml (14.2 fl oz) - Thickened Cream (AKA - Heavy Cream, Full Fat Cream, Pourable Double Cream and Whipping Cream)
1 tsp (5g) - Sea Salt Flakes
1 tsp (1g) - Nutmeg, Freshly Grated
120g (4.2 oz) - Matured Cheddar Cheese, Freshly Grated
80g (2.8 oz) - Gruyere Cheese, Freshly Grated
Optional -
Grated Matured Cheddar Cheese Grated Over The Top
*Important Notes* -
- This recipe can be made a day or two in advance. Once you get to the step of pouring on the cheese sauce, it can be placed in the fridge for a later date. When you're ready to cook it, pull it out of the fridge, allowing it to sit for 15 minutes to get to room temperature and bake as per instructions.
- This recipe can be made without the cream. Simply use 420ml (14.2 fluid ounces) of full fat milk as a substitute. This will equal to 840ml (28.4 fluid ounces) of full fat milk in total.

AIR FRYER CHEESY CAULIFLOWER BAKE ~ KETO ~ EASY AND SCRUMPTIOUS!
Hello, welcome to EZ Eatery! Today we're going to make a super simple and delicious cauliflower bake in the air fryer. I am really excited to share this with you because my BFF, Carole, sent this recipe over and asked me if we could make it in the air fryer. Why, of course we can!
For everybody on a keto diet, you're going to love this! If you love cheesy roasted cauliflower, you're going to love this! If you like quick easy meals in the air fryer, you're going to love this!
Cauliflower Bake
1 Head of Cauliflower, or Bag of Frozen Cauliflower
2 TBSP Butter, Melted
2/3 C Sour Cream
1/4 C Heavy Cream
2 Cloves Garlic, Minced
1 1/2 C Cheddar Cheese, Shredded
1 TSP All Purpose Seasoning
Salt and Pepper to Taste
1 C Shredded Chicken, Optional
Directions
In a large bowl, toss the cauliflower with butter. Season with salt and pepper. If using frozen cauliflower, thaw first or microwave with some water until thawed. Roast in 400 degree air fryer for 8 minutes. While the cauliflower is roasting, whisk together the sour cream and heavy cream, until smooth. Stir in minced garlic and half of the cheddar cheese. Add seasonings and chicken. Add roasted cauliflower and mix thoroughly. Top with remaining cheese and return to 400 degree air fryer for additional 6 minutes, or until cheese is completely melted. That's it! Enjoy!
For oven directions, preheat oven to 450 F, follow recipe above and bake for 15 - 20 minutes. After the cauliflower has been mixed with all ingredients and cheese layered, bake for 5 - 10 minutes, until cheese melts.

Full Recipe:
1 head cauliflower
1 cup colby jack cheese (shredded)
1 cup sharp cheddar cheese (shredded)
1 package of bacon (pre-cooked and chopped)
1/2 cup mayo
1/2 cup sour cream
1 tbsp ranch seasoning
salt and pepper to taste (about 1/2 tsp each)
Optional: fresh chives
Steam cauliflower 10 mins. Remove from heat to cool
Pre-heat oven to 375 (or 370)
Mix mayo, sour cream, seasonings, full cup of cheddar and 3/4 chopped bacon together. Add mixture to cauliflower
Pour into casserole dish - any size will be fine
Top with cup of colby jack cheese and rest of bacon.
Bake covered for 20 mins
Uncover and bake additional 15 mins
Let rest 10 mins
