How To make Cevapcici(Yugoslavian Sausages)
1 lb ground lamb
1 lb ground veal
1 lb ground pork
1 large yellow onion, peeled and grated
3 cloves garlic -- peeled and crushed
3 tbsp hot Hungarian paprika, or
sweet paprika and a little cayenne 2 tbsp freshly ground black pepper
Salt to taste Pinch of freshly grated nutmeg Olive oil for basting
Mix all the ingredients, except the oil, thoroughly and roll the mixture into little "cigars" about 1 inch by 3 inches. Rub lightly with olive oil and grill or broil until done. These are great on the barbecue. Serve with yoghurt sauce (recipe follows).
Yoghurt Sauce
1 pint yoghurt 1/2 cucumber, peeled, grated and drained 1 hour 2 cloves garlic, peeled and crushed Juice of 1/2 lemon Salt and ground white pepper to taste Pinch of cayenne pepper
Mix all the ingredients together and serve with Cevapcici as a dip.

Ingredients:
Serves appr. 4 person
Beef neck from younger bull 1 kg
Garlic 1 gloves
Raw Milk 4 l (Alternatively use sour cream)
Bosnian Lepine 2-4 pieces
Onion
Salt'n Pepper
Prepare:
Mince the meat. Infuse water with garlic and let it cool. Put infused water in minced meat with salt. Mix and keep in a dry and cool place for around 24h or up to 72h. If you wanna do the Kajmak, then put arround 4l of raw milk in a case and leave it 48h at room temperature
Cooking: Put the meat on the grill and brush it occasionally with some beef stock. Douse the bosnian lepina with some beef stock, too and put it on the grill with the meat. After that, spread some salt over a partly cut onion and smash it while in a kitchen towel. This will enhance the flavour of the onion but decrease its sharpness. Try it!

Ovako je moj rahmetli babo pravijo Ćevape,radijo je vise od 30 godina, čista junetina i par začina,pečeni na uglju.
Rešio sam da vam malo dočaram tu atmosferu kako je nekad bili u našem domu i Ćevapi na roštilju
Ovo je prvi u nizu recepata za Ćevape slede : Leskovacki Ćevapi Pazarski Ćevapi Sarejevski Ćevapi kao i drugi znani i neznani recepti za ukusnu deliciju sa Balkana poznatu kao Ćevap.
U prvom delu videa imate pripremu 15 kg mesa ,koja se seče na kocke i posoli sa 18 posto Soli ili na 1 kg mesa 18 gr.
Ovo se naziva Ćevap masa.
Pratite proceduru kao na videu,pa onda od te smese izdvojite 3 kg Ćevap mase.
Dodajte:
21g sode bikarbone
1 jajce
1g crni biber
300g crni luk
150 ml mineralna voda
150g brašna
1 prašak za pecivo
vegeta

This is a Croatian skinless sausage - or you might call it a kebab, especially since it comes from the Ottoman Empire.
The whole thing is easy to make, anyone can do it.
1 Kg Ground Beef
6 - 8 Garlic Cloves
15 vg Kosher Salt
1 Tablespoon Sweet paprika
1/2 - 1 teaspoon cayenne
Black pepper to taste
