How To make Chapati (Phulka)
1 c Whole wheat flour (or 1/3
White + 2/3 wh. 1/2 c Water
1. Put flour in a large bowl with half the water
2. Blend the two together until it holds.
3. Beat and knead well until it forms a compact ball.
4. Knead dough into it is smooth and elastic.
5. Set aside for 30 minutes.
6. Knead and divide dough into 4 to 6 parts
7. Roll each ball into a tortilla like flat, about 1/8" thick.
8. heat an ungreased skillet.
9. Put phulka on it and let cook for about 1 minute.
10. Turn and cook the second side for 2/3 minute till small bubbles form.
11. Turn again and cook the first side pressed lightly with a towel.
It should puff. Serve warm (maybe slightly buttered). Note: As the rolled out chappatis will dry out if they are left stand while cooking other, it is advantageous to roll them out individually before cooking them. How to make Soft Chapati and Roti step by step Recipe.
Ingredients:
Wheat flour (गेहूं का आटा) – 2 cups (300 grams)
Salt (नमक) – ½ tsp or to taste
Oil (तेल)– 2 tsp
Ghee (घी) – 2 to 3 tbsp
Wheat flour (गेहूं का आटा) – 1 cup (150 grams) (for dusting)
Directions:
Getting ready:
1.Take 2 cup of wheat flour, ½ teaspoon salt in a big mixing bowl, add 1 tsp of oil. Mix well, add water in small portions to prepare soft dough.
2.Firstly bind the wheat flour well and gradually press and smoothen it. Knead the dough well for 3 to 4 minutes until it smoothes. If the dough is still stiff, add water accordingly. Once ready, cover and keep it aside for 20 minutes to set.
Making:
3.After 20 minutes are done, grease your hands with some oil and smoothen the dough again to make it soft.
4.To make chapattis,take small lumps from the dough. Roll the lump into round dough ball and flatten it a little.
5.Dust the dough ball with dry wheat flour and roll out the chapatti thinly with 6 to 7 inch diameter. When the chapatti sticks to the rolling board, dust the chapatti with wheat flour again and roll out. Meanwhile heat a tawa on flame for roasting the chapattis.
6.Gently lift the roti from the rolling board and place it on the tawa. Let the chapatti roast a little from beneath. Once the chapatti is roasted from beneath ,flip the side and let it roast until it gets little brown spots beneath.
7. When you see little brown spots on this side, roast the chapatti directly on the flame.Flip the chapatti and very carefully roast it making sure it doesn’t burn.
8. Immediately take offthe chapatti from flame when it gets brown spots and place on the bowl kept above the plate. If you place it directly on the plate it will turn soggy from beneath. Likewise prepare rest of the chapattis as well.
9. Apply some ghee onthe roasted chapattis. For this, pour some ghee over it and rub the chapattisto each other to spread the ghee evenly.
10.For roasting chapattis on the tawa, roast the roti on both the sides then flip the side and press down with a ladle until it puffs up and brown spots appear.
Serving:
11.You can also store the chapattis directly inside the casserole. Spread a foil sheet or thick cotton napkins inside the casserole. Place the chapattis inside the casserole and cover. Store the chapattis immediately inside the casserole but keep it open until the chapattis cool down.
12. Serve these steaming hot chapattis with any Indian curry or stir fried sabzi as wellyour taste and enjoy your meals.

In this video we will how to make soft chapati in Tamil. Chapati recipe is very simple with only 4 ingredients, wheat flour, salt, water and oil. The dough should be kneaded well for at least 5 mins and then rested for at least 30 mins. This resting of dough is very important as it helps in the formation of gluten which makes the batter very soft and chewy rather than being hard and stiff. For the chapati to be soft they have to puff up while cooking this forces air into the layers and gets cooked rapidly also separation of the layers gives the soft feel to the chapati while chewing.

A recipe can only give you ideas but it is experience and practice that will make you better when it comes to making rotis. So please do not be disappointed by just a few tries as you've got to give that time and patience to make chapatis.

Ingredients for making roti/chapati -
* 1 & 1/2 cups (standard measuring cup) whole wheat flour (chapati flour or atta)
* Little less than a cup of hot boiling water. Use the same cup to measure water in which you measured your flour. Please do not stick to this proportion of water strictly. Depending on the quality of the flour used you may need more or less water. Keep a bowl of warm water by the side while kneading. Dip your knuckle in the water and then press out the dough as shown in the video.
* 1/4 th teaspoon salt (optional)
* 1 teaspoon oil (optional but it helps to keep the rotis soft)
* I like brushing my rotis with little extra virging olive oil as soon as they are taken out of the tawa. You can apply ghee or butter or skip this step entirely but the oil keeps the rotis soft even if you want to store them for 2 days.
Store the leftovers in an airtight container in the refrigerator. Right before eating you can warm them up in a pan over low heat. You can even brush them with little water and microwave for 20 to 30 seconds.
Serve rotis with any curry of your choice or lentils.
