How To make Charlie's Pickled Shrimp
3 lb Fresh shrimp
6 qt Water
1/4 c Salt
2 pk Zatrain's shrimp/crab
-seasoning 2 tb Black pepper
1 Large lemon-halved
1 c Wesson oil
1/2 c Olive oil
3/4 c Heinz white vinegar
2 ts Salt
2 tb Lea & Perrins Worcestershire
-Sauce 1/2 ts Tabasco Jalapeno Sauce
1 lb Vidalia onions-sliced thin
2 cl Garlic
minced
2 tb Capers
2 ts Celery seed
3 Jalapeno peppers :
minced
In a large pot, bring the water, salt, crab boil, and pepper to a boil. Squeeze in the lemon juice and add the rinds. Pour in the shrimp, all at once. Bring back to boil, over HIGH heat. Boil 3 minutes...NO MORE. Remove from heat. Add 3-4 cups ice cubes to pot to stop cooking. Let stand 5-10 minutes. remove shrimp. When cool enough to handle, peel, leaving last tail segment attached. Set aside. In a large bowl,stir together the remaining ingredients. Add shrimp to marinade. Toss to coat well. Cover tightly. Refrigerate overnight or up to two days, tossing occasionally in marinade. Drain. Serve on a large platter or decorative bowl lined with lettuce leaves. Garnish with a scattering of ripe olives. Ingredients
Dry Prawns : 1 cup
Grated coconut : 1 cup
Dried Red Chilli : 5 nos
Small Red Onions /Shallots : 3-4 nos
Curry leaves : 2 sprig
Tamarind : Small ball size
Salt to taste
Oil: 3 or 4 tbsp
Method
First we clean and wash the dry prawn
Heat oil in a pan add prawns to a golden brown and keep it aside.
Add dry roast dried red chilies until brown and crisp,keep it in a side.
Take another pan add coconut with shallots and curry leaves till the coconut turns
golden brown in colour and curry leaves turn crisp.
Then we grind the fried dry red chilli and fried prawns and roasted coconut and
curry leaves.
At last we add small pinch of tamarind and grind them all and transfer into a
bowl
Finally our kerala style dry prawn chutney is ready to serve and enjoy the meal

തയ്യാറാക്കുന്ന വിധം
1) ചെമ്മീൻ കഴുകി എടുക്കുക, എണ്ണയിൽ വറുത്ത് മാറ്റി വയ്ക്കുക. ചുവന്നമുളക് വറുക്കുക. തേങ്ങ ചിരകിയത് ചേർക്കുക. ചെറിയ ഉള്ളി അരിഞ്ഞത് ചേർത്ത് വഴറ്റുക. വേപ്പില ചേർക്കുക. തേങ്ങവറുത്തു എടുത്ത ശേഷം ചട്ടി വാങ്ങിവെയ്ക്കുക.
2) വറ്റൽ മുളക്, കൊഞ്ച്, തേങ്ങചിരകിയത്, ഉപ്പ് എന്നിവ കല്ലിൽ അരച്ചെടുക്കുക. വാളൻപുളി ചേർക്കുക. നന്നായി അരച്ച് എടുത്ത ശേഷം സെർവിങ്ങ് ഡിഷി ലേക്ക് മാറ്റുക.
സ്വാദിഷ്ടമായ ചെമ്മീൻ ചമ്മന്തി തയ്യാറായി.
