How To make Cheese Pasta Roll with Tomato Sauce
TOMATO SAUCE:
1 lb Tomatoes
2 tb Butter
2 ea Shallots, peeled, minced
Bouquet garni ** Salt (to taste) Pepper (to taste) PASTA ROLL:
2 tb Butter
1/2 c Ham, smoked, diced
4 ea Scallions, minced
8 oz Cheese, cream, softened
1/4 c Cheese, Parmesan, grated
1/2 c Cheese, Ricotta
2 lg Eggs
1/2 ts Pepper, black
2 ea Pasta, spinach, sheets
( 12 x 4 inches ea. ) 1/2 lb Prosciutto, sliced
:
1/4-inch thick 1 ga Stock, chicken
Chives, chopped ** Bouquet garni is a cheesecloth bag (or some other porous material) in which you've put some rosemary, thyme, bay leaf, and crushed peppercorns. There is no rule for how much of each you'd use. Tomato Sauce: ============= To prepare the tomatoes, drop them briefly into boiling water, then remove and plunge them into cold water and peel. Remove the seeds and chop the tomatoes. Melt butter in a saute pan and add minced shallots. Saute, covered, for 5 minutes over low heat. Add tomatoes and bouquet garni. Season to taste. Cook covered over medium heat for 30 minutes. Remove shallots and bouquet garni, then puree. Reserve sauce. Pasta Roll: =========== In a saute pan, melt the butter and add the diced ham and scallions. Cook over medium heat for about 2 minutes until scallions are soft. Beat the cream cheese, Parmesan cheese, Ricotta cheese, and pepper together until smooth. Add the sauteed ham and scallions to the cheese mixture; then add eggs, and mix well. Cover and refrigerate at least 2 - 3 hours. Spread half of the filling on one of the pasta sheets - leaving a half-inch border around the edges. Brush the border with a little melted butter. Place a layer of sliced Prosciutto to cover the filling mixture then beginning at one of the short ends of the pasta, roll it up. Do not roll too loosely or the poaching liquid may seep into the cheese/meat mixture. Wrap roll in a double thickness of cheesecloth and tie each end securely with string. Repeat for second pasta sheet. Fill a large saute pan with chicken stock. Bring the stock to a boil and add pasta rolls. Reduce the heat to simmer and cook gently, turning occasionally, for 25 minutes. Drain and cool before removing string and cheesecloth. Cut each roll in half-inch thick slices. Pour some of the tomato sauce into a pool on the bottom of individual serving plates and arrange the slices on the plates. Garnish with chopped chives. Serve warm or at room temperature. Great combo this: ham and oozy fontina with spinachy ricotta rolled up in pasta and baked with tomato sauce. There are several versions of this in Italy; in Faenza, where 85 year old Rina lives, it is called capriccio. Watch Rina, helped by her best friend Cicchi, show her version. Recipe ingredients below.
Mix the following:
250g sheep’s milk ricotta
150g of cooked, squeezed dry spinach
50g Parmigiano cheese which is 14 months old,
1 free range egg
plenty of grated nutmeg
salt.
For the béchamel sauce:
30g butter
3 tablespoons 00 flour
3/4 litre of whole milk
plenty of nutmeg
salt
For the tomato sauce, simmer for 10 minutes:
1 400g tin whole tomatoes, chopped
6 basil leaves
3 tablespoons extra virgin olive oil
To assemble:
200g thinly sliced ham
150g sliced fontina cheese
For the pasta: 3 large free range eggs, 300g 00 flour
This is enough to make one 30x20 centimetre (approximately) baking tray.

Parmesan Cheese Wheel Pasta
Cheese wheel pasta has constantly been featured across the internet, so I finally had to give it a try. So, we shipped an 80 pound parmesan cheese wheel straight from Italy. The first trip, it was damaged in transit. I don't know exactly what that means...did it roll off the truck? Did somebody accidentally damage it so they could eat it? I mean, who doesn't want some fresh Parmigiano Reggiano. But it really does make me think. Hmm...
But the second trip, it made it all the way to my kitchen in Boston. After learning the delicate yet demanding process of opening the cheese wheel, we dug out a bowl within the cheese, lit it on fire to get a cheesy sauce, then added our fresh, homemade egg pasta to with some garlic cream sauce and blended it together. The result? Indescribable.
Homemade Pasta
2 cups all-purpose flour
2 eggs + 4 yolks
Cream Sauce
1/2 cup butter
4-6 cloves garlic
2 tbsp all-purpose flour
2 cups heavy cream
grated parmesan until thickened sauce

Pasta in Red Sauce | Fresh Pasta in Arrabbiata sauce | होममेड रेड सॉस पास्ता | Chef Sanjyot Keer
Full written recipe for Homemade pasta with arrabbiata sauce
Prep time: 30-35 minutes
Cooking time: 45-50 minutes
Serves: 2-3 people
For fresh pasta
Ingredients:
• Refined flour 200 gm
• Salt 1/4th tsp
• Water 100-110 ml
Methods:
• In a large bowl add the refined flour along with the remaining ingredients & add water in batches.
• Once the flour comes together after mixing, cover it with a damp cloth & let it rest for 10-15 minutes.
• After the dough has rested, transfer it onto the kitchen platform & knead it well for 7-8 minutes, the texture of the dough should become smooth, cover it with a damp cloth & let it rest for half an hour again.
• Once the dough has rested divide it into 4 equal parts & form them into roundels.
• Further, place the roundel over a flat surface & roll it into a thin chapati using a rolling pin, keep dusting flour if it sticks to the rolling pin. Try to roll it thin and big as possible.
• Now dust little flour over the chapati and place another chapati, do this layering of either 3-4 chapati.
• Now use a sharp knife and trim the edges to make a large rectangle or square shape, now dust little more flour over the dough and fold it, make sure to do with light hands and do not press, now cut into 1 cm thick strips and cut carefully without the chapati or the layer sticking to each other.
• Now dust some more flour and with light hands try to separate the layers by pulling them lightly so they increase lengthwise.
• Your fresh fettucine pasta is ready, keep it covered with a moist cloth until you use it for making the pasta.
For arrabbiata sauce
Ingredients:
• Olive oil 2 tbsp
• Garlic 2 tbsp (chopped)
• Basil leaves a handful
• Red chilli flakes 1 tbsp
• Oregano 1 tbsp
• Kashmiri red chilli powder 1 tsp
• Fresh tomato puree of 5-6 medium size tomatoes
• Canned tomato puree 200 gm
Method:
• Set a pan on medium heat, add olive oil and heat it well, further add chopped garlic, stir & cook on medium heat.
• Now add 4-5 nos. of chopped basil leaves, and stir for a minute, now add red chilli flakes, oregano & kashmiri red chilli powder, stir & cook on low flame for few minutes.
• Now add the fresh tomato puree & the canned tomato puree, salt and sugar, stir well, cover & cook for 20-25 minutes. Make sure to stir in between while cooking the sauce. You can adjust the tanginess of the tomatoes by adding or reducing the amount of sugar.
• By the time sauce cooks you can put water for boiling in a stock pot, add salt and little oil to boil the freshly made pasta.
• As the sauce is almost cooked, roughly tare some more basil leaves with hands and add to the sauce, stir & cook for a minute. Your arrabbiata sauce is ready.
• Now as the water is also been boiling and the sauce is also ready, add the freshly made pasta in boiling water and cook for 4-5 minutes, as the pasta cooks add it in the sauce and mix lightly, but mix well so the sauce coats well.
• While mixing the pasta with the sauce, if it tends to dry up add little pasta water and cook for 1-2 minutes.
• Your fresh homemade fettucine pasta is ready to be served, serve it hot and garnish it with some parmesan cheese and some garlic bread on side.
