This is not your original beenie weekie we all loved as kids. Mom knocked it up a peg or two and made it a more adult version.. I think you are going to love her Updated Frank & Beans Casserole. Let me know what you think about this version and y'all enjoy.

Ingredients:
1 package frozen lima beans
1/2 lb frankfurters/sliced
2 tablespoons butter
1 medium onion, chopped
1 clove garlic, minced
1 can (1 lb) kidney beans, drained
1 jar (1lb, 6oz) baked beans
1 teaspoon prepared mustard
1 tablespoon brown sugar
1/2 cup catsup
1/2 cup dry red wine
1/2 teaspoon salt
dash pepper
1/2 cup crushed potato chips
1. Cook lima beans according to package directions and drain.
2. Preheat oven to 350F
3. Heat butter in large skillet, and saute frankfurter slices. Onion, and garlic, stirring occasionally
4. When onion is tender, stir in lima beans and all remaining ingredients except for potato chips.
5. spoon mixture into a 2 quart casserole dish, top with chips, bake 30 minutes.

Today we cover a favorite of ours.. so easy to make and really leaves you satisfying. This is a dedication to my late dad, who discovered this recipe.
I do share the story plus my sister will be making this for us today.. Enjoy :)

Hot Dog Casserole
Ingredients:
2 cans chili with beans
1 - 10 ounce can Rotel tomatoes (drained)
8 ounce can crescent dough
1½ cups shredded cheddar cheese
3 slices of cheddar cheese, cut in half to make 6 pieces
6 beef smoked sausage
½ onion diced
INSTRUCTIONS:
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a 9×13 inch pan, combine the canned chili and Rotel and stir until well mixed.
3. Sprinkle the diced onions over the chili.
4. Sprinkle the cheese onto the center of the pan. Set aside for now.
5. Lay out the crescent dough on the counter. Tear the croissants into 6 individual triangles.
6. Place a piece of the cheddar cheese on the crescent triangle. Roll the hot dog up in the crescent triangle making sure to leave the hot dog ends exposed.
7. Place each wrapped hot dog on top of the chili mixture in the baking dish. Try to make sure they are evenly spaced.
8. Bake in the oven for 30-40 minutes or until the crescent rolls turn golden brown on top and are cooked through.
9. You may need to cover the crescent rolls with foil to prevent them from burning.
10. Serve and Enjoy !!!
