Zucchini Pizza Crust Recipe
This zucchini crust pizza is the perfect solution for all those who are on a diet but can’t give up their pizza. This “pizza” recipe is gluten-free, low-carb, keto and much healthier than regular pizza. And in addition, this zucchini pizza recipe is super easy to make and you can top your pizza as you like.

Ingredients:
For the zucchini crust:
3 medium zucchini
1 egg
1 teaspoon Oregano
Salt to taste
Pepper to taste
1/4 cup (32g) Cornstarch
1/4 cup (25g) Grated Parmesan
For the topping:
170g (6oz) Pizza sauce
150g (5.3oz) Grated mozzarella
Basil leaves
Tomatoes
Directions:
1. Preheat oven to 425Fº (220Cº). Line a baking sheet with parchment.
2. Grate zucchini. Then, using cheesecloth or a dish towel, squeeze excess moisture out of zucchini. Transfer grated zucchini to a large bowl.
3. Add egg, crushed garlic, grated parmesan, cornstarch, oregano, salt and pepper. Mix until well combined.
4. Spread zucchini crust into a 10-inch circle on prepared baking sheet. Bake for 30 minutes, until golden.
5. Spread the sauce over the crust, sprinkle shredded mozzarella cheese and top with your favorite topping. Bake until the cheese is melted, about 6-8 minutes.

Zucchini, Goats Cheese & Mint Pizza Recipe - Woolworths
Delicious, rustic, home made vegetarian pizza. This video recipe w/ celebrity chef Tobie Puttock details the process w/ handy tips.
ZUCCHINI, GOATS CHEESE & MINT PIZZA
Preparation Time: 20 mins
Cooking Time: 12 mins
Serves: 8 a starter
Ingredients:
2 small cloves fresh garlic
Woolworths Select Sea-Salt grinder
1 fresh lemon, rind finely grated, juiced
1/3 cup Woolworths Select extra virgin olive oil
Woolworths Select Black pepper grinder
80g parmesan coarsely grated
4 (180g each) large fresh zucchini, washed, ends trimmed
100g goats' cheese
2 cups medium fresh basil leaves
1 cup fresh mint leaves, torn
Woolworths Select Australian extra virgin olive oil, to serve
Quick pizza dough
1 teaspoon dried instant yeast
1 teaspoon Woolworths Select pure blend honey
1/2 teaspoon sea salt flakes
3/4 cup warm water
2 tablespoons Woolworths Select Australian extra virgin olive oil
2 cups Macro Organic plain flour
Method:
1. Quick pizza dough: Preheat oven 240⁰C fan forced. Put yeast, honey, salt, warm water and olive oil into a bowl and stir, allow to sit for 5 minutes. Put flour in bowl of a stand mixer. Add yeast mixture. Mix on low speed with a dough hook until the dough comes together. Mix on high speed for 5 minutes, alternately knead for 10 minutes until dough is soft and pliable. Set aside to prove 15-20 minutes. Turn out onto a flat surface and knead for 1 minute. Cut dough in half. Roll each piece of dough out on a sheet of baking paper to 12cm x 43cm long thin rectangle. Put onto greased trays.
2. Meanwhile put garlic and pinch of salt into mortar, pound, using a pestle, to a paste. Add 1-2 teaspoons lemon juice, 1/4 cup of the oil and freshly ground black pepper, to season. Spread garlic oil evenly over base of each dough. Sprinkle each base with parmesan cheese.
3. Peel the zucchini into long ribbons with a potato peeler into a medium bowl. Add the lemon rind, remaining juice and remaining 1 tablespoon oil, season. Toss to coat. Drain any excess liquid then divide the zucchinis evenly over both pizzas. Bake 8 minutes, swap the trays over in the oven and bake further 4-5 minutes or until base is light golden.
4. Remove from the oven, crumble over the goats cheese and cook a further 1-2 minutes until cheese is soft. Remove pizzas to board, top with basil and mint. Drizzle with a little olive oil.
Tip 1: Making garlic oil is super easy and great to have in the kitchen. There are a lot of ways to make it. You can bash the garlic on a mortar and pestle with a pinch of salt and then add the oil OR you can hand chop the garlic and then add the oil OR you can even do it in a food processor. You can keep the garlic oil for up to a week in a jar with a lid, be sure to keep in a cool dark cupboard. The longer you keep the garlic oil the greater the intensity of the garlic flavour within the oil.
Tip 2: you can replace the goats cheese with feta or fresh ricotta.
Tip 3: store opened yeast in an airtight container in the fridge.

Zucchini Pizza Bites
Zucchini pizza bites that are to die for. I know a lot of you don’t like mushrooms so I wanted to share a delicious alternative made with zucchini ???? and it’s even easier and faster too. This is my take on them and you will need:

2 medium zucchini’s
pizza sauce of choice
parm ( any cheese works )
dry oregano
parsley or basil for garnish

Please note: you can use any cheese you love ( vegan , goat , boursin , feta , parm etc ) it will be delicious with any cheese option so feel free to experiment. You can also use mini pepperonis but it’s up to you. I love @raoshomemade pizza sauce but you can use any.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Directions

Pre-heat your oven to a high setting ( 450 F ) If your oven doesn’t go that high, just choose the highest setting that you can but you may need to make them longer. Cut your zucchini into 1/4 inch circles or even diagonally too. Add a teaspoon of your favourite pizza sauce in each one , teaspoon of parm or any cheese of choice , and some dry oregano is optional. Bake at 450 F for 10 minutes and I let mine get golden on BROIL for 1-2 minutes but that’s totally optional. Garnish with basil or parsley. Enjoy, and don’t forget, to follow me for more.

INGREDIENTS
3 medium zucchini, or about 4 cups grated zucchini
1 large egg
2 cloves garlic, minced
1/2 tsp. dried oregano
3 c. shredded mozzarella, divided
1/2 c. grated Parmesan
1/4 c. cornstarch
kosher salt
Freshly ground black pepper
1/4 c. pizza sauce
1/4 c. pepperoni
Pinch red pepper flakes, for garnish
Basil, for garnish
DIRECTIONS
1. Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
2. Transfer zucchini to a large bowl with egg, garlic, oregano, 1 cup mozzarella, Parmesan, and cornstarch and season with salt and pepper. Stir until completely combined.
3. Transfer “dough” to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
4. Spread pizza sauce over crust then top with remaining mozzarella and pepperoni. Bake until cheese is melted and crust is crispy, about 10 minutes more. Garnish with red pepper flakes and basil.
