How To make Chicken In Lemon Grass and Chili (Ga Xao Xa Ot
3 lb Chicken
4 Cloves garlic
1 Large onion
3 T Vegetable oil
1 Salt
2 T Minched lemon grass
1 t Ground chilies
4 T Fish sauce(nuoc mam)
1 T Granulated sugar
1 T Caramel sauce
1 c Water
Rinse chicken and dry well. Cut into small pieces. Peel garlic and slice finely. Cut onion into halves lengthwise and then cut lengthwise into 1/2 inch strips. Heat oil in large frying pan over medium heat. Add a pinch of salt, garlic and onion. Fry over medium heat until onion becomes translucent. Add lemon grass and chili. Fry 1 to 2 minutes until fragrant. Add chicken and cook until lightly browned. Add fish sauce, sugar and caramel sauce. Mix well. Add 1 cup water and cook 45 minutes or until chicen is tender. Stir occasionally and add more water if necessary. Makes 4 servings. CARAMEL SAUCE: Mix 1/2 c sugar with 4 tablespoons of water in heavy saucepan. Bring to a boil over medium heat and let boil until mixture changes colour. Turn heat down to low and heat until brown. Add 1/2 cup water to mixture. Stir until sugar is dissolved. Remove from heat and store in a jar in the refrigerator.

Lemongrass Chili Wings (Canh Ga Xao Sa Ot)
INGREDIENTS
2 lb wings cut apart at the joints
2 whole lemongrass stalks
4 cloves garlic
2 shallots
3 tbsp fish sauce
1 tsp salt
2 tbsp brown sugar
1 tsp tumeric powder
1/2 tsp pepper
6-7 bird's eye chilies chopped
1 cup coconut water (or water)
2 tbsp oil
INSTRUCTIONS
Peel and discard tough outer leaves on the lemongrass stalk. Cut about 1-2 inches off the root. Use only the tender white core. Save green stalk for flavoring soup or discard.
Slice lemongrass.
Add all the lemongrass, garlic and shallot in a food processor and mince.
Marinate wings with fish sauce, brown sugar, salt, pepper, tumeric powder and half of the lemongrass, garlic, shallot mixture. Refrigerate for at least 1 hour or overnight for best flavor.
Over medium heat, add 1 tbsp oil in the pan. Add in chopped chilies and the rest of the lemongrass mix. Saute til fragrant, about 30 seconds. Add in chicken wings and sear each side for a minute. Pour in all the leftover marinade in the bowl and coconut water. Cover and simmer over low heat until most of the sauce is gone, about 10-15 minutes.
Serve immediately or cook over medium high heat for another 2 mins until wings are browned and caramelized.
Served with steamed rice and sliced cucumber.

I love this recipe because it is so good on top of Jasmine rice or Banh Mi(Vietnamese sandwich) and also I can make with pork, it works perfectly as well! If you are a vegetarian, no worries, you can make this with fried tofu! Superb!!!

Lemongrass Chicken Ingredients
Serves 2
4 Chicken thighs, boneless, skin on (Approximately 1 lb.)
1/2 Stalk of lemongrass (using only bottom white part, approximately 2 1/2 Tbs.)
4 Cloves garlic
2 Thai chili
1 Shallot
2 Tbs. cooking oil
For the Sauce
2 Tbs. Fish sauce
2 Tbs. Sugar
1/4 tsp. Black pepper
To Serve with
Cilantro leaves
Warm cooked Jasmine rice
Cucumber slices
Braised Lemongrass Chicken • Gà Kho Sả Ớt | Recipe Video
Ingredients -
4 pieces of chicken drumettes (cleaned and sliced)
½ tbsp white sugar
2 tbsp fish sauce
2 tbsp finely minced lemongrass
½ tbsp minced purple shallot
3 cloves minced garlic
1 sliced red chili or 1/2 tsp chili powder (optional)
½ tbsp maggi soy sauce
½ tsp Knorr seasoning powder
Black or white pepper
3 sliced spring onions
½ cup hot water
Neutral oil
Instructions -
Add 1.5-2 tbsp of oil to the pan and set the stove to medium-high heat. Add chicken, sear for 3 minutes until brown and turn over. Add sugar and fish sauce. Bring to a slight boil for 2 minutes and occasionally turn chicken to prevent burning. Add lemongrass, shallot, garlic, chili, soy sauce, seasoning powder, dash of pepper and gently mix. Add 3 spring onion stems, hot water and cover for 3 minutes. Remove the lid and simmer for another 2 minutes. Garnish with more pepper, chili and sliced spring onions. Enjoy with rice!

INGREDIENTS:
CHICKEN THIGHS W SKIN ON
SHALLOT
GREEN ONION
GARLIC
RED PEPPERS
CILANTRO
FISH SAUCE
SALT/PEPPER/CHICKEN POWDER

Ga Xao Xa Ot (Stir-fry Chicken with Lemongrass and Chili Pepper)
Ga Xao Xa Ot (Stir-fry Chicken with Lemongrass and Chili Pepper)
Ingredients:
2 Chicken Breasts
1 cup Lemongrass
Dried Chili Pepper
1/2 cup Ginger (cut into strips)
1/2 cup minced Garlic
1 Tbsp. Oyster Sauce
1/2 tsp. Turmeric Powder
1/2 tsp. Salt
1 tsp. Sugar
2 Tbsp. Oil
1 Tbsp. Fish Sauce
1 tsp. Sugar
2 Tbsp. Water
Black Pepper
Mince some Lemongrass you need about 1 cup. Put into a bowl and set aside.
Cut 2 Chicken Breasts into slices, put in a bowl and set aside.
To marinate the Chicken add 1/2 tsp. Salt. Add 1 tsp. Sugar. Add 1 Tbsp. Ginger.
Add 1 tsp. minced Garlic. Add 1 Tbsp. minced Lemongrass. Add 1 Tbsp. Oyster Sauce.
Cut 1 dried Chili Pepper and add into bowl. Mix well. Cover with plastic wrap and let it marinate for about 1 hour.
In a pan add 2 Tbsp. Oil. Add in the rest of the minced Garlic and Ginger. Saute for a few seconds. Add in the Lemongrass.
Add 1/2 tsp. Turmeric Powder. Mix well. Add in the marinated Chicken. Add 1 Tbsp. Fish Sauce. Add 1 tsp. Sugar.
Continue to stir for a few minutes. Add 2 Tbsp. Water. Once it's cooked add some Black Pepper.
You can add some more Chili Pepper. Hope you like this recipe.
