How To make Chicken Lo Mein
1 Whole chicken breast
-- skinned and boned 1 tb Kikkoman Stir-Fry Sauce
4 oz Angel hair pasta (capellini)
1/3 c Kikkoman Stir-Fry Sauce
2 tb Vegetable oil; divided
1/4 lb Fresh snow peas; julienned
1 lg Carrot; julienned
1/8 ts Salt
2 ts Sesame seed; toasted
Cut chicken into thin strips; coat with 1 Tbsp. stir-fry sauce. Let stand 30 minutes. Meanwhile, cook pasta, omitting salt. Drain; rinse to cool
and drain thoroughly. Combine 1/3 cup stir-fry sauce and 3 Tbsp. water; set aside. Heat 1 Tbsp. oil in hot wok or large skillet over high heat. Add chicken and stir-fry 2 minutes; remove. Heat remaining oil in same pan. Add peas and carrot; sprinkle with salt. Stir-fry 4 minutes. Add sauce mixture, chicken, pasta and sesame seed. Lo Mein noodles are yellow noodles that are about 3mm/ 1/8 wide and they are yellow because they are made with egg (as opposed to white noodles). Best if you can find fresh noodles in the fridge section of the grocery store (usually just soak in boiling water for a minute), but can be made with dried egg noodles, ramen OR even pasta (yep really, I've made Lo Mein plenty of times with SPAGHETTI, no one can tell the difference once it's cooked!)

INGREDIENTS:
1 pound of sliced chicken breast or thighs
1 pound of Lo Mein Noodle - makes 2 wok servings
or spaghetti/linguini/fettucini
Oil for wok
Vegetables I used: (split between two servings)
Onions
Bell Peppers
Carrots
Bamboo shoots
Cabbage/Bok Choy
Green onions
1 tbsp. minced garlic
1 tsp. grated ginger
Sauce:
3 tbsp. chicken broth/vegetable broth/water
2 - 3 tbsp. light soy sauce
2 tbsp. oyster sauce
1/4 tsp. sesame oil
Marinade for chicken:
2 tbsp soy sauce
2 tsp. rice vinegar
1 tbsp. corn starch

The vegetables and sauce ingredient ratios are up to you. The noodles can be substituted with your favorite thin pasta as well. Chow mein is a staple in most Chinese restaurants and I have tried so many variations. This recipe is my recreation from one of my local spots I order take-out from. The addition of chicken makes this dish a hearty stir-fry dinner I love to make.
