A. Recipe ( in English)
Chicken Marsala
Note: 1 cup = 237 ml
Ingredients:
3 chicken breasts, sliced (4 oz / 113 gr x 3)
1/4 tsp salt or to taste
1/4 tsp black pepper or to taste
1/4 cup all-purpose flour for coating
2 Tbsp olive oil or cooking oil
1 Tbsp unsalted butter
1 cup thickly sliced (or quartered) baby bella mushrooms
1/4 white onion, chopped
2 garlic cloves, minced
¼ cup sparkling grape juice
½ cup chicken stock
½ cup heavy whipping cream
1 Tbsp parsley finely chopped
Salt, pepper
Instructions:
1. Cut chicken breasts into 3 cutlets.
2. Cover the chicken with plastic wrap and pound it.
3. Season chicken all over with salt and pepper.
4. Coat it in flour and set aside.
5. Heat a non-sticky cooking pan over medium heat.
6. Add the olive oil and butter. Then wait until the oil and butter are hot.
7. Sear the coated chicken both sides, and once it turns golden, take out from the pan.
8. Using the same pan, add the garlic, onion, and baby bella mushrooms.
9. Simmer and stir them frequently.
10. Add the sparkling grape juice (to substitute marsala wine).
11. Simmer it for a few minutes until the juice mostly reduced or evaporated.
12. Add the chicken stock and heavy cream. Simmer it again.
13. Return the seared chicken to the pan and cook it until the chicken is completely cooked.
14. Taste the sauce, and if necessary, add salt and pepper.
15. Keep on the heat until the sauce has slightly thickened.
16. Add the fresh chopped parsley to the sauce.
17. Transfer the chicken in a dinner plate and serve it while the chicken is still hot.
B. RESEP (Bahasa Indonesia)
Ayam Marsala
Catatan: 1 cangkir = 237 ml
BAHAN-BAHAN:
3 dada ayam, potongan lebar dan tebal (4 oz / 113 gr x 3)
1/4 sdt garam atau secukupnya
1/4 sdt lada hitam atau secukupnya
1/4 cangkir tepung serbaguna
2 sdm minyak zaitun atau minyak goreng
1 sdm mentega tawar
1 cangkir jamur baby bella yang diiris tebal (atau dipotong empat)
1/4 bawang Bombay putih, cincang
2 siung bawang putih, cincang
¼ cangkir jus anggur bersoda (sparkling)
½ cangkir kaldu ayam
½ cangkir krim kental
1 sdm peterseli cincang halus
Garam, lada
CARA MEMASAK:
1. Potong dada ayam menjadi 3 potongan lebar dan tebal.
2. Tutupi ayam dengan plastik pembungkus dan pukul-pukul.
3. Bumbui ayam dengan garam dan merica.
4. Lumuri dengan tepung dan sisihkan.
5. Panaskan wajan anti lengket dengan api sedang.
6. Tambahkan minyak zaitun dan mentega. Kemudian tunggu sampai minyak dan mentega panas.
7. Masukkan ayam yang sudah dilapisi kedua sisinya. Setelah berubah menjadi keemasan, keluarkan dari wajan.
8. Dengan menggunakan wajan yang sama, tambahkan bawang putih, bawang merah, dan jamur baby bella.
9. Tumis dan aduk sesering mungkin.
10. Tambahkan jus anggur bersoda (untuk menggantikan anggur marsala berakohol).
11. Didihkan selama beberapa menit sampai sebagian besar jus anggurnya berkurang atau menguap.
12. Tambahkan kaldu ayam dan krim kental. Rebus lagi.
13. Kembalikan ayam panggang ke dalam wajan dan masak hingga ayam benar-benar matang.
14. Cicipi sausnya, dan jika perlu, tambahkan garam dan merica.
15. Panaskan api sampai saus sedikit mengental.
16. Tambahkan peterseli cincang segar ke dalam saus.
17. Pindahkan ayam ke dalam piring makan dan sajikan selagi masih panas.

For this chicken cordon blue, I show you how to pound out a boneless chicken breast, and then stuff it with some Swiss Cheese and Ham. Seared off in a pan, I think move it into the oven to finish cooking.
