Super Easy Chicken Mole
Ingredients
3 chicken breast
1/2 onion
3 chiles New Mexico
3 chiles de Arbol
2 garlic cloves
1/2 tablet chocolate Abuelita
1 1/2 tbps peanut butter
1 1/2 tbsp chicken bouillon
1 jar of Mole Doña Maria

Mole, you say? Doesn’t that take all weekend? Well, yes it does. But not this one.
Jammed with a harmonious balance of dried chiles, nuts, seeds, dried fruit and chocolate, this mole poblano can be ready in about an hour’s time, or more if you want to let the pot simmer awhile.
Key to your success here is preparation: gather your ingredients, read the instructions carefully and let’s get to work.

Mole rojo recipe
Cook the chicken
5 lb whole chicken, cut into smaller pcs
Aromatics for chicken broth
1/4 ea bunch cilantro, fresh
1/4 yellow onion, medium
1 tomato, diced
4 hierba buena, sprigs (mint)
5 ea garlic cloves, peeled
10 cups water
Lightly salt it ( 1 tsp kosher salt)
Ingredients for the sauce
20 ea dry chile guajillos, cleaned & devained
5 ea dry puya chiles, cleaned & devained
3 ea dry chiles de arbol, cleaned
** Add 4 cups hot broth to rehydrate dried peppers
** Additional 1 cup of broth to blend the peppers (1st batch)
3-4 TBSP avocado oil
1 corn tortilla (pan fried)
1/4 ea medium yellow onion, sliced
4 ea garlic cloves, peeled
Nuts (unsalted & un-toasted)
10 almonds, whole
6 ea pecans, whole
3 TBSP peanuts, whole
2 TBSP sunflower seeds
2 TBSP pumpkin seeds
2 TBSP sesame seeds
Aromatics
1/2 tsp cumin, whole
4 cloves (clavos)
1/2 tsp black peppercorns
** 2 cups hot broth to help puree 2nd batch.
** 1/2 cup of broth to get all the puree from the blender.
Season with salt to taste (at the end), I did 1 tsp, kosher salt.
When served, drizzle Lime juice over your individual plate of mole.

Slow Cooker Mole with Chicken | Rick Bayless Taco Manual
Yes, you could buy a mole paste, simmer it briefly with chicken stock and stir in coarsely shredded chicken for quick-and-easy, oh-so-Mexican chicken tacos. But the truth is, I haven’t found a mole paste in the United States I can whole heartedly recommend. So, to offer you the simplest path to this quintessentially Mexican flavor, I put together this unorthodox, super-streamlined mole recipe using a slow cooker, one that turns out a very respectable, satisfyingly delicious red mole to mix with chicken. I typically start the mole early in the morning, spending about 20 minutes getting everything sauteed and simmering in the slow cooker. Then I come back to it a couple of hours before serving to puree the mix, and do the final simmer seasoning. Two notes: First, this recipe gives you about 10 cups of mole, which is comically more than you need for the tacos. But it is the smallest batch you can successfully make in the slow cooker, and, besides, it freezes well and is more than welcome on a plate with poached or grilled chicken and as the sauce on enchiladas. Second, I wish I could tell you to make it with all ancho chiles—the most easily available dried chile—but the mole doesn’t come out with a true Mexican flavor; you need to have the complexity that the other two dried chiles add.
