How To make Chicken Mushroom Pie with Dill Crust
2 1/2 c Chicken; diced cooked 1 ts Steak sauce
1 c Cream of celery soup 1/2 ts Marjoram; crumbled
2 Jars Mushrooms; (2.5 oz. eac 1/2 pk Piecrust mix
1/2 c Celery; sliced 1/2 ts Dillweed
1/2 c Green pepper; diced
DIRECTIONS: Combine chicken, celery soup, mushrooms with liquid, celery, green pepper, steak sauce and marjoram in a large skillet. Heat slowly until bubbly hot, about 10 minutes. Turn into a 4-cup shallow baking dish. Prepare piecrust mix, following label directions, adding dillweed with wa- ter. Roll out to fit top of baking dish; cover pie; turn edge under, flush with rim; flute. Cut a 6-inch "X" in center of pastry. Fold corners back. Bake in a very hot oven (450^F.) for 20 minutes or until crust is golden brown. Let stand 10 minutes before serving. -----

Easy Chicken Pot Pie Recipe
Made from scratch, this classic Chicken Pot Pie has a buttery flakey double crust with a creamy chicken and vegetable filling. It’s the ultimate comfort food that the entire family will love. You can use a rotisserie chicken from the market or leftover chicken in your fridge a refresh with this delicious homemade pot pie. This homemade version is so much better than a storebought pie and quite easy too.

Greek Chicken & Phyllo Pies (Air Fryer & Oven Recipe) Kotopita

Ingredients
8-10 sheets of (#4) phyllo
4 oz (113g) butter, melted
optional: sesame seeds for garnish
For the Filling:
1 and 1/2 pounds (680g) boneless chicken thighs
2-3 tablespoons balsamic vinegar
2-3 tablespoons olive oil
salt, to taste
black pepper to taste
8 oz (226g) cream cheese, softened
1 cup shredded mozzarella cheese
4 oz (113g) feta cheese
1 egg
4 scallions, thinly sliced
1 large roasted red pepper, diced
a pinch of crushed red pepper flakes
Instructions
Prepare the chicken: Place the chicken in a tray and drizzle the olive oil and vinegar over it. Season both sides with salt and pepper.
Air Fryer Instructions: Preheat the air fryer to 400 °F for 5 minutes. Add the chicken to the basket and cook for 10 minutes on one side. Flip and cook 5 additional minutes on the other side. Set aside to cool.
Oven Instructions: Preheat the oven to 400 °F, 200 °C. Bake the chicken for about 25 minutes or until the internal temperature reaches 165 °F.
Make the Filling:
In a large mixing bowl combine the cream cheese and scallions and mix together. Add the remaining filling ingredients. Chop the chicken and add to the filling. Mix together until incorporated.
Assemble the pies: Place a sheet of phyllo onto a clean work surface and drizzle butter on top. Layer another sheet of phyllo over it and drizzle with butter.
Place 4 tablespoons of filling in the center and fold the sides over the filling drizzling butter before each fold. Place the pie seam-side down on a baking tray lined with parchment paper. Brush the tops of the pies with butter and sprinkle sesame seeds on top.
Air Fryer Instructions: Set the air fryer to 350 °F and bake the pies for 15 minutes or until golden and crisp.
Oven Instructions: Preheat the oven to 350 °F, 180 °C and bake on the center rack for about 50 minutes or until golden and crisp.
Serve the pies warm with tztaziki on the side. Kali Orexi!
Notes
Freezer Instructions: Assemble the pies and freeze until set. Transfer to freezer-safe bags or wrap the tray tightly with plastic wrap. They will keep fresh in the freezer for up to 3 months. Bake them frozen in a preheated oven (350 °F) until golden. About an hour.

Chicken Leek Mushroom and White Wine Pie
Not really a true pie as it only has a pastry topping BUT is the easiest and lightest pie you will eat evaaaaa! Melt in your mouth chicken, crunchy snow peas, mushrooms and leeks all in a dreamy white wine sauce. Get on the recipe here;
Puff Pastry Salmon (Salmon Wellington)
Here is what you'll need!
Serves 2
Ingredients
2 tablespoons butter
2 cloves garlic, chopped
½ medium onion, chopped
5 ounces spinach
1 teaspoon salt (for spinach)
1 teaspoon pepper (for spinach)
⅓ cup breadcrumbs
4 ounces cream cheese
¼ cup Parmesan, shredded
2 tablespoons dill, chopped
1 sheet puff pastry, softened to room temperature
1 salmon filet
1 teaspoon salt (for salmon)
1 teaspoon pepper (for salmon)
1 egg, beaten
Preparation
1. Preheat oven to 425°F.
2. In a pan over medium heat, melt butter.
3. Add the garlic and onions, cooking until translucent.
4. Add the spinach, salt, and pepper, cooking until spinach is wilted.
5. Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside.
6. On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
7. Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
8. Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. Flip the puff pastry-wrapped salmon over and transfer for a baking sheet lined with parchment paper.
9. Brush the beaten egg on the top and sides of the pastry.
10. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern.
11. Brush the top again with the egg wash.
12. Bake for 20-25 minutes, until pastry is golden brown.
13. Slice, then serve!
