30 Minute One Pot Chicken Pasta - Perfect Family Weeknight Dinner!
This one pot cheesy chicken pasta meal is easy, quick and delicious. This is my 30 Minute One Pot Chicken & Pasta!

Ingredients:
1 tbsp vegetable oil
1 large onion peeled and chopped
2 large chicken breasts cut into chunks
1 Pinch salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree (usually gluten free, but best to check if required)
1 red bell pepper de-seeded and chopped
4 1/2 cups (300g) dried pasta - such as spiralli (use a gluten free variety if required)
1 tsp dried oregano
½ tbsp Worcestershire sauce (usually gluten free, but best to check if required)
28 oz (800g) tinned chopped tomatoes
1 1/4 cups (300ml) chicken stock made from hot water from the kettle + 2 stock cubes (or 2 heaped tsp veg bouillon for gluten free)
1/2 cup (120ml) milk half fat or full fat
20 sugar snap peas/snow peas roughly chopped
1 packed cup (100g) mature/strong cheddar cheese grated/shredded
1 tbsp chopped fresh parsley

Ingredients:
-Chicken boneless cubes 350g
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Paprika powder ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Dried parsley ½ tsp
-Namak (Salt) ½ tsp or to taste
-Olive oil 1 tbs
-Boiling water as required
-Tamatar (Tomatoes) 4-5 medium
-Olive oil ½ tbs
-Shimla mirch (Capsicum) small cubes 1 medium
-Olive oil 3 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) chopped 1 tbs
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Dried basil 1 tsp
-Dried parsley 1 tsp
-Paprika powder ½ tsp
-Tomato puree 1 & ½ tbs
-Chicken stock 1 Cup
-Cream ¾ Cup
-Penne pasta 350g (boiled with salt as per pack’s instruction)
-Cheddar cheese grated ½ Cup
-Mozzarella cheese grated ½ Cup
-Dried parsley
Directions:
-In a bowl,add chicken,ginger garlic paste,paprika powder,black pepper powder,dried parsley,salt & olive oil,mix well,cover & marinate for 15-20 minutes.
-In boiling water,add tomatoes (slightly cut with the help of knife) blanch for 3-4 minutes then strain, remove tomato skin & chop roughly.
-In chopper,add tomatoes,pureed tomatoes & set aside.
-In a wok,add olive oil & marinated chicken,mix well until it changes color & cook until tender (approx.5-6 minutes).
-Add capsicum,mix well for a minute then take out in a bowl & set aside.
-In the same wok,add olive oil,onion,garlic,mix well & cook until onions are translucent.
-Add pureed tomatoes,mix well & cook for a minute.
-Add salt,black pepper powder,red chilli crushed,dried basil,dried parsley,paprika powder,mix well & cook for 2-3 minutes.
-Add tomato puree and mix well,cover & cook on low flame for 3-4 minutes.
-Add chicken stock & mix well.
-Add cream,mix well & cook for a minute & set aside.
-In baking dish,add boiled pasta,cooked chicken,prepared creamy sauce,cheddar cheese,mozzarella cheese & dried parsley.
-Bake in preheated oven at 170C for 10 minutes (on top grill).

-Cream dal ker ache tarhan mix karein aur ek minute liya paka lein & side per rakh dein.
-Baking dish mein boiled pasta dal dein,cooked chicken,tayyar creamy sauce,cheddar cheese,mozzarella cheese & dried parsley dal dein.
-Preheated oven mein 170C per 10 minutes kliya bake ker lein (on top grill).

This Peri Peri Chicken Pasta is easy to make and will be done in under in 15 minutes.
All you need:
• 1 Chicken breasts
• 2 Shalott onions
• Olive oil
• Piri Piri Seasoning (oregano, salt, sweet paprika, chilli flakes)
• 2 tsp tomato paste
• 200-250ml Coconut cream (or other cooking cream)

-Zeera powder (Cumin powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Lemon juice ½ tbs
-Olive oil 3 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) crushed 1 tsp
-Chicken boneless cubes 500g
-Kali mirch powder (Black pepper powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Onion powder 1 tsp
-Dried oregano 2 tsp
-Paprika powder 1 tsp
-Namak (Salt) 1 tsp or to taste
Prepare White Sauce:
-Olper’s Cheddar cheese 100g
-Makhan (Butter) 3 tbs
-Maida (All-purpose flour) 1/3 Cup
-Olper’s Milk 3 Cups
-Chicken cube 1
-Jaifil powder (Nutmeg powder) ¼ tsp
-Namak (Salt) ½ tsp or to taste
-Lehsan powder (Garlic powder) ½ tsp
-Fresh parsley chopped 1 tbs
-Penne pasta boiled 400g
-Corn kernels boiled ½ Cup
-Shimla mirch (Capsicum) chopped ½ Cup

-Olper’s Mozzarella cheese 4-5 tbs

Directions:
Prepare Salsa Chicken:
-In a chopper,add onion,garlic,jalapeno,tomatoes,cumin powder,salt lemon juice,chop well & set aside.
-In a frying pan,add olive oil,onion,garlic,mix well & sauté until translucent.
-Add chicken & mix well until it changes color.
-Add black pepper powder,red chilli powder,onion powder,dried oregano,paprika powder,salt,mix well & cook on medium flame for 1-2 minutes.
-Add prepared salsa,mix well & cook until oil separates (3-4 minutes) & set aside.
Prepare White Sauce:
-Cut Olper’s cheddar cheese into cubes & set aside.
-In a saucepan,add butter & let it melt.
-Add all-purpose flour & mix well for 30 seconds.
-Gradually add milk & whisk well.
-Add chicken cube,nutmeg powder,salt,garlic powder,fresh parsley,whisk well,bring it to boil & cook until it thickens (2-3 minutes).
-Add cheddar cheese,mix well & cook until cheese melts & set aside.
-In a large bowl,add boiled penne pasta,prepared salsa chicken,prepared white sauce,corn kernels,capsicum,fresh coriander & mix well.
-Add grated cheddar cheese,mozzarella cheese & mix well.
-In a baking dish,add prepared mixture,cheddar cheese,mozzarella cheese,dried oregano & red chilli crushed.
-Bake in preheated oven at 170C until cheese melts (14-15 minutes).
