Homemade Chicken Spread | Easy Chicken Pâté
A simple Chicken Spread (or Chicken Pâté) for any occasion. Fix a delicious sandwich for breakfast, lunch or a snack, and speaking of snacks, this spread can be layered onto a buttered toast, a cracker, a canape and topped with cheese, fresh/pickled veggies (peppers, cherry tomatoes, olives, etc) to create some pretty appetizers (aka hors d'œuvres). Stuff a pita bread, a bagel... you can be innovative in your approach to this recipe!
Ingredients:
Oil for frying
18-20 Garlic cloves, crushed* (missed mentioning it in the video)
1 Large Onion, sliced
Salt to taste
1/2 teaspoon Sugar
500 grams boneless Chicken
1/2 Cup Water
Black Pepper (as desired)
1-2 teaspoons Red Chili Flakes
2 Tablespoon Butter (Salted/Unsalted; accordingly adjust Salt whilst cooking)
This can be refrigerated in an airtight container for a period of 7 days. It can also be frozen for about 2 months; however it isn't something I'd recommend, simply because fresher is always better.

You’ll fall in love with this recipe! Chicken liver pate with dried apricots and white wine gelee is so elegant, super tasty and easy to make! Hope you will enjoy it!

Ingredients for 8 servings:
600 g chicken livers
3 shallots
2 cloves of garlic
180 ml heavy cream
60 g butter
50 ml Amaretto
¼ tsp allspice
¼ tsp hot smoked paprika
1 pinch clove powder
Salt
Black pepper
For the apricot and wine gelee:
200 ml white wine
1 tbsp honey
1 tbsp sugar
50 g dry apricots
1 sprig rosemary
1 tsp gelatin powder

Chicken Liver Pâté
Chicken Liver Pâté
Ingredients
2Lb chicken liver
16oz milk
1/3 cup water
1 onion
2 carrots
1 butter stick
Salt
Seasonings to taste
Soak the cleansed chicken liver (without hearts) in milk or cream for 20 minutes. Fry the onions and carrots for 5-7 minutes, salt and add strained liver. Pour 1/3 glass of water and simmer over low heat, covered for 20 minutes. Then remove the lid and evaporate the liquid. Grind the liver with 1/2 stick of butter, place it in container and let it cool!

This pate truely is one of the best starters there is out there folks. I used some smoked butter in this version which was taken from a recipe in Jane Grigson's book Charcuterie and French pork cookery, from grub street publishing.
