How To make Chicken Thighs Glazed with Orange Thyme Cumin Sauce
1/2 cup dry white wine
1/4 cup red wine vinegar
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
3 tablespoons soy sauce, low sodium
2 tablespoons fresh thyme leaves
minced
1 clove garlic :
minced
1 tablespoon honey
1 teaspoon fresh ginger minced
1 teaspoon ground cumin
1 chopped jalapeno pepper :
seeded, optional
8 skinless chicken thighs
Remove the skin and the surface layer of fat from the thighs. Rinse. Towel dry.
In a large nonstick skillet, combine the sauce ingredients, including the jalapeno. Over medium-high heat, bring the mixture to a boil, then add the chicken (bones up). Reduce the heat to low, cover and simmer for 15 minutes. Remove the cover, turn the chicken pieces over, raise the heat to medium and cook until the liquid is evaporated and the chicken is glazed, about 10 to 15 minutes. Adjust heat as necessary.
PanTry: Shoyu, a Japanese soy sauce that is lower in salt.
Substitutions: Vegetable stock or water for dry white wine. Canned jalapeno pepper. 1 tablespoon of garlic chives, snipped instead of clove garlic.
Do NOT substitute white meat.
Pat's note: If you make 6 thighs, do *not* reduce the recipe's sauce. Halve the recipe for 4.

JUICE OF 1/2 LEMON
CHILI POWDER PEPPER
1 TO 2 TEASPOON GARAM MASALA
1 TO 2 TEASPOON TURMERIC
1 TEASPOON CUMIN ( I USED ROASTED )
1 TEASPOON BLACK PEPPER
1 TO 2 TABLESPOON OLIVE OIL
SALT ( APPROX 1 TO 2 TEASPOON) ADJUST TO TASTE/PREFERENCE
FRESH GARLIC
FRESH GINGER
THYME
GREEN ONIONS/SCALLIONS ( ADD THIS IN THE PAN BEFORE BAKING)
YOU CAN COMBINE ALL THE ABOVE INGREDIENTS, OR YOU CAN RUB THE OLIVE OIL FIRST ONTO THE CHICKEN.
BEST TO MARINATE OVERNIGHT OR AT LEAST 2 HOURS.
LET THE CHICKEN REST OUTSIDE THE FRIDGE FOR ABOUT 30 - 45 MINUTES BEFORE PUTTING IT IN THE OVEN ( MEAT COOKS BEST AND EVENLY)
COOK AT 350 DEGREES FOR 1 HOUR, REMOVE COVER AND COOK FOR AN ADDITIONAL 30 - 35 MINUTES. ( SOME CHICKEN MAY BE TOUGHER SO USE JUDGMENT)
REMOVE AND LET CHICKEN REST FOR 30 MINUTES BEFORE CUTTING.
CITRUS BLEND CHICKEN:( FOR 1/2 )
2 TABLESPOON ORANGE JUICE
2 TABLESPOON LEMON JUICE
1 TEASPOON PAPRIKA
FRESH GARLIC ( POWDER IS OK TOO)
SALT ( TO TASTE/PREFERENCE)
1 TEASPOON BLACK PEPPER
1 TABLESPOON SALT FREE DASH LEMON PEPPER.
OLIVE OIL
LEMON, SCALLIONS/GREEN ONIONS, THYME ( ADD THIS TO THE PAN BEFORE BAKING)

This tender pressure cooker chicken will melt right off the bone. As an added bonus, the aromatic spices will leave your kitchen smelling amazing!
Ingredients:
• 4 bone-in, skin-on chicken thighs (about 2 lb) (908g)
• 1 tsp ground cumin
• 1 tsp kosher salt
• ½ tsp freshly ground black pepper
• ¼ tsp ground cinnamon
• ¼ tsp ground turmeric
• ½ tsp olive oil
• 1 small yellow onion, thinly sliced
• 3 garlic cloves, thinly sliced
• ¾ cup low-salt chicken broth (177g)
• 2 Tbsp dry white wine (30g)
• ½ cup pitted green olives (90g)
• 2 Tbsp fresh lemon juice (32g)
• Finely chopped fresh parsley, for garnish (optional)

What’s cooking in this episode? I have for you my version of Broiled Orange Cumin Chicken Thighs. I used orange juice concentrate, honey, tomato paste, parsley, and cumin in my marinate mixture for the chicken thighs. Enjoy this sweet and tangy dish.

Ingredients:
* chicken thighs
* garlic
* parsley
* orange juice concentrate
* olive oil
* honey
* tomato paste
* cumin
* salt
* pepper
Recipe:
Step 1 - Add orange juice concentrate, olive oil, honey, cumin, garlic, parsley, tomato paste, salt, and pepper in a large bowl. Stir. Add in the chicken thighs. Coat the chicken with the mixture. Marinate for at least 30 minutes.
Step 2 - Arrange the marinated chicken thighs in a baking tray lined with tin foil. Brush the remaining marinade onto the chicken.
Step 3 - Broil the chicken thighs for 15 minutes on each side in the oven.
Step 4 - Remove from the oven. let the broiled chicken thighs rest.
This dish is good to plate.
