1 lb chuck roast, cubed small
2 lb ground beef
1 yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 Tbsp tomato paste
1-28oz can tomato purée
1-28oz can diced tomatoes
8-10oz draft beer (lager)
36-40oz beef broth
1-15oz can black beans
2-15oz cans dark red beans
2 Tablespoons smoked paprika
1 teaspoon cayenne pepper, less for less spice
2 Tablespoons chili powder
1 Tablespoon cumin
1 teaspoon all purpose seasoning (Natures Seasoning)
1 teaspoon Cajun seasoning
Salt and pepper to taste
2 teaspoons avocado oil

Chicken Chili

Ingredients
4 cups chopped yellow onions (3 onions)
1/8 cup good olive oil, plus extra for chicken
1/8 cup minced garlic (2 cloves)
2 red bell peppers, cored, seeded, and large-diced
2 yellow bell peppers, cored, seeded, and large-diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried red pepper flakes, or to taste
1/4 teaspoon cayenne pepper, or to taste
2 teaspoons kosher salt, plus more for chicken
2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
1/4 cup minced fresh basil leaves
4 split chicken breasts, bone in, skin on
Freshly ground black pepper
For serving:
Chopped onions, corn chips, grated cheddar, sour cream
Directions
Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.
Preheat the oven to 350 degrees F.
Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.

What's for dinner? Crockpot White Chicken Chili!
Perfect for an easy weeknight meal!
Ingredients:
2 chicken breasts
1 can black beans drained and rinsed
1 can corn undrained
1 can hotel tomatoes undrained
1 tsp cumin
1 tbsp chili powder
1 tsp onion powder
1/2 cup ranch dressing
4-8oz cream cheese
Directions:
Combine all ingredients (except cream cheese) in crockpot
Stir
Heat on low for 6-8 hours OR high for 4 hours, stirring occasionally
Stir & melt in cream cheese during last 30 minutes if desired.

White Bean Chicken Chili
2 Tablespoons butter
2 onions, chopped
1 teaspoon minced garlic
4-5 cups cooked cubed chicken breasts
50 oz. can chicken broth
48 oz. jar Randall’s Great Northern Beans, use juice
2-14 oz. cans Rotel diced tomatoes with green chiles, DO NOT DRAIN
2 cans (10 oz. each) White Shoepeg Corn DO NOT DRAIN
1 can Cream of Chicken soup, undiluted
2 Tablespoons cumin
1 Tablespoon oregano
2 Tablespoons cilantro, dried or fresh
2-4 teaspoons chili powder
2 cups shredded Monterey Jack Cheese
In a large stockpot, cook onions and garlic in the butter until just tender. Add the next 10 ingredients. Cook over medium low heat for five minutes or until the vegetables are tender. Ladle into bowls and top with shredded cheese. Serve with crackers, crusty, dinner rolls or sandwiches.
