How To make Chicken with Apples
4 lb Chicken
cut up
2 T Butter
2 T Oil
1/3 c Brandy
4 Apple :
peeled, cored &
-sliced 2 Onion -- chopped
1 c Apple cider or apple juice
-for authorityuse calvados 1 c Sour cream
1 T Flour
2 T Parsley :
chopped
1 t Tarragon
1/2 ts Paprika
Salt to taste Pepper :
to taste
In a casserole, heat butter and oil and brown chicken; season with salt and pepper if desired. Warm brandy in saucepan, ignite, and pour over chicken. Allow flame to burn itself out. Add apples and onion. Combine cider, sour cream, flour, and herbs; stir until smooth and pour over contents of casserole. Bake, covered, at 350 degrees for 1 hour, or until chicken is tender. If you want, 2 cups of cider or apple juice may be used; just omit the sour cream and use 2 Tbs of flour. You can also try it without the tarragon, using 1/4 tsp each of nutmeg, cinnamon, and ground cloves. Roasted Spiced Chicken and Apples

Ingredients
One 3- to 4-pound chicken, patted dry
Kosher salt
2 tablespoons Baharat, recipe follows
1 small yellow onion, quartered
8 sprigs fresh thyme
4 sprigs fresh rosemary
4 Gala apples, cored and quartered
1 teaspoon sugar
1 tablespoon olive oil
Splash of apple cider vinegar
Baharat:
1 tablespoon coriander seeds
1 tablespoon black pepper seeds
1 tablespoon cumin seeds
1 teaspoon whole cloves
1/2 teaspoon cardamom seeds
2 tablespoons sweet paprika
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
Directions
Place the chicken breast-side up in a 9-by-13-inch pan. Season inside and out with 2 1/2 teaspoons salt and the Baharat. Refrigerate, uncovered, for at least 1 hour and up to overnight; this will help the skin get crispy!
Preheat the oven to 450 degrees F.
Stuff the cavity of the chicken with the onion, 4 sprigs of thyme and 2 sprigs of rosemary. Scatter the apples and remaining sprigs of thyme and rosemary around the chicken, sprinkle with the sugar and a pinch of salt and drizzle with the olive oil. Roast the chicken until the juices run clear and the internal temperature reaches 160 degrees F, about 1 hour. Let the chicken sit for 10 minutes.
Discard the herb sprigs. Add a splash of vinegar to the apples and toss to coat. Carve the chicken and serve with the apples on the side.
Baharat: In a dry skillet over medium heat, toast the coriander seeds, black pepper seeds, cumin seeds, cloves and cardamom seeds, stirring often, until fragrant, 3 to 5 minutes. Transfer to a spice grinder and blend. Stir in the paprika, cinnamon and nutmeg.

Chicken thigh - 6 pcs.
Cinnamon - 1 tsp.

Sage - 1 sprig
Cinnamon - 2 sticks
Chicken broth - 200 ml
Saffron - 2 strings
Apple - 4 pcs.
Butter - 50 g
Honey - 5 tbsp.
Cooking:
Cut the whole leg in half. Mix salt, pepper, nutmeg and cinnamon. Roll all the pieces of meat in the resulting mixture and set aside.
Finely chop the onions. Cut the garlic head in half across. In the hot broth (or water) put saffron. Take it to the side so that it reveals its taste.
In a frying pan fry pieces of chicken in olive oil on high heat. Fry until golden brown.
Immediately place a second frying pan with a thick bottom and a high bead. On medium heat, fry the onion until the onion is soft, but not fried.
Roasted chicken pieces into this frying pan on a cushion of onions. Reduce heat to a minimum.
Add to the chicken cut garlic, a sprig of sage, pour the broth with saffron (saffron water).
Add the cinnamon sticks, after having broken them in half, and cover with a lid. Leave to simmer on low heat.
In the meantime, turn to apples. Peel the apples from the peel and core. Slice the slices.
Melt the butter in a frying pan over low heat. Add the honey. Lay out the apples, make a big fire. Mix them well with butter and honey. Caramelize the apples, stirring occasionally.
Transfer the ready apples to the chicken. Stew it over low heat for another 10 minutes.
