1 pound black-eyed peas
2 tablespoons olive oil
¼ cup onion, chopped
2 cloves garlic, finely chopped
1 ½ teaspoons salt
12 cups water
Cook over medium heat for 1 ½ hours.

1 tbsp. Bacon Grease
1 large White Onion, finely chopped
1 medium Green Bell Pepper, finely chopped
1 stalk of Celery, finely chopped
1 small Jalapeño, seeds discarded and finely diced
6 cloves of Garlic, finely minced
2 Bay Leaves
2–3 tsp. Creole Kick, plus more to taste
1 tbsp. W Sauce
1 lb. Smoked Turkey Leg
1 lb. (16 ounces) dried Black-Eyed Peas, sorted and rinsed
6 cups Low-Sodium Chicken Stock or Broth
freshly chopped Parsley, as garnish- optional

Hoppin' John Southern Cajun Black Eyed Peas Recipe Details:
1 lb of black-eyed peas (soaked)
4 sliced smoked bacon thick-cut or preferred
sausage link (Kielbasa Sausage by Hillshire Farms) I used turkey but use preferred
bell peppers, red/green diced
2 bay leafs
4-5 garlic cloves
2- 3 Stalks of Celery
1 onion diced
black pepper to taste
cajun seasoning
smoked paprika
1 tsp thyme dried or fresh
1 tbsp chicken bouillon + 4 cups of water combined
3 cups of water
parsley fresh garnish

Southern Black Eyed Peas Recipe | Southern Recipes If you're looking to keep the family tradition alive by eating some Black Eyed Peas on New Year's Day then you've found the right video to watch. These Black Eyed Peas go great with Collard Greens and of course you've got to put out some Cornbread muffins to start of you New Year. These beans can be served as a side dish with other comfort food throughout the year so enjoy!
Black Eyed Peas Ingredients
16 ounces Dried Black Eyed Peas
4 cups Chicken Stock (less sodium)
4 cups Water
1 Leftover Ham Bone or a Ham Shank
1 medium Onion, diced large
2 Garlic Cloves, smashed and peeled
1 tsp Black Pepper
2 Bay Leafs (optional)
2 tsp Creole/Cajun Seasoning (I used Creole Kick)
Salt to taste
Soak Beans overnight at least 8 hours or you can Hot Soak your Beans if you forget to soak them prior to.
Serve over rice and enjoy!

Black Eyed Peas for New Years Recipe
Ingredients:
•1 pound Black-eye Peas (soak in water over night)
•1 Jalapeno (diced)
•1 qt. Chicken broth
•1 tablespoon minced garlic
•1 tsp. Spicy seasoning
•1 tsp. Garlic and herb seasoning
•Parsley Flakes
•1 tsp. Cajun seasoning
•1 tsp. Black Pepper
1 tablespoon Knorr's Tomato flavoring
•2 stalks chopped celery
•1 onion chopped
•1 Green pepper chopped
•Chopped smoked Ham
•4 Andouille sausage links
•2 tsp homemade roux
Directions:
0:00 - intro
1:00 - list of ingredients
3:21 - using a skillet, brown you sausage and ham together, remove when brown
5:17 - brown your veggies together, add some chicken broth it will help deglaze the pan.
8:21 - add everything to a bigger pot, add chicken broth to cover the beans. Add all of your seasoning to the pot, cover with a lid...Cook for 45 mins. to 1 hr. Or until your beans are tender.
12:34 - to make your juice THICKER, just mash some of the Black-eye peas against the side of the pot. Now, allow them to cook 15 mins more.
