Hoy: Chili Blanco????
1. Corta 1 jalapeño, 1 cebolla, 1 pimiento verde, 3 dientes de ajo y un poco de chile verde. Adicionalmente prepara 1 litro de caldo de verduras y cocine 400 g de frijoles blancos, en caso de no querer usar los enlatados.
2. En una olla grande, a fuego medio, calienta 2 cucharadas de aceite de oliva y frie durante 5 minutos la cebolla, el jalapeño y el pimiento verde.
3. Agrega los dientes de ajo, 1 cucharada de alcaravea y 30 g de harina, mezcla los ingredientes.
4. Adiciona el caldo de verduras, en la olla, con los frijoles blancos, 150 g de maíz, los chilis verdes y cocina a fuego lento los ingredientes durante 15 minutos.
5. Agrega 500 ml de leche y cocina a fuego lento durante otros 5 minutos. Decora el chile con jugo de lima y 1 pizca de sal y pimienta.

Ingredients
~2 lb leftovers or sub for chicken, boneless breasts or thighs
2 tbsp Extra Virgin Olive Oil
1 large yellow onion, diced
3 Anaheim chiles, seeded, diced
1 jalapeno, seeded, diced
1 tbsp ground cumin
1 tsp oregano
4 cloves garlic, minced
3 tbsp unsalted butter
1/4 cup flour
1 quart unsalted chicken stock
1 cup 50/50 or heavy cream
8 oz cream cheese, cubed
1 bunch cilantro, minced
4 oz (1 cup) pepper jack cheese, grated

CROCKPOT: *If using a crockpot, add all of the ingredients into a slow cooker, and cook on low for 4 hours, or on high for 6 hours.
INSTAPOT: If using an Instapot, saute veggies the same in the bottom of your pot. Then, add all of the ingredients into the pot and cover. Cook on high pressure for 20 minutes. Vent, stir, and enjoy!

- 32oz Chicken Broth
- 3 to 4 Tbsp Mexican Crema (OR PREFERABLY 1/4 Cup Heavy Cream or 4oz Cream Cheese)
- 1 15oz Can White Kidney Beans
- 1 15oz Can of Northern Beans
- 4oz Can Diced Green Chiles
- 1 Yellow Bell Pepper, Diced
- 1/2 White Onion, Diced
- 1.5 Cups Frozen Fire Roasted Corn (Equivalent to 1 Can)
- 1 Jalapeno Pepper, Diced
- 1 Tsp Minced Garlic
- 1 Tsp Seasoned Salt
-1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Ground Cumin
- 1 to 2 Tsp Chili Powder
- Salt and Black Pepper to Taste
