This recipe tastes just like Chili's Skillet Queso. You have to try it with the pico de gallo on top!

RECIPE:
INGREDIENTS:
32 oz. Velveeta sliced or cubed
30 oz. Original Hormel® Chili with Beans (two-15-oz. cans)
2 Tbsp. chili powder (cut in half if you don't like spicy)
1 tsp. cumin
1 lime
2 cups milk
Pico de Gallo salsa – for serving (optional):
4 Roma tomatoes diced
1 jalapeno, minced
1/8 cup finely minced cilantro
1/4 cup diced red onion
1/2 lime
1/4 tsp. salt
SLOW COOKER SIZE: 4-quart or larger
INSTRUCTIONS:
Add the Velveeta and chili to the slow cooker.
Sprinkle over the chili powder and cumin.
Cut the lime in half and squeeze out all the juices over the items in the slow cooker.
Pour over the milk. Stir.
Place the lid on the slow cooker.
Cook on HIGH for 2 hours. Stirring occasionally.
Pico de Gallo Salsa (optional):
In a large bowl, add the diced tomatoes, minced jalapeno, diced onion, chopped cilantro. Squeeze over the half of lime and add the salt. Stir and serve alongside the chili cheese dip.

If you too share a deep love and affinity for queso, this is the recipe for you. This recipe is authentic as Texas queso could probably get with one little twist -- CHILI! Texas chili, of course, so no beans!

The recipe starts with a quick-fix homemade taco-flavored chili. Rather than dumpling chili out of can (which has a soft, mushy texture) we are going to make our own. The flavor AND the texture are going to be far superior this way. Don't be initimidated by the idea of making your own chili.
This one comes together in just 15 minutes, with very minimal effort!
Once the chili is whipped up, we're going to add the cheese and turn it into the best chili cheese dip queso recipe you've ever laid taste buds on!
For this, you'll need velveeta. You can't make authentic, real-deal Texas Queso without it! In addition to the velveeta, we're also going to add some freshly grated cheddar. This will get us some seriously awesome cheese pulls and amp up the flavor.
This queso recipe is the perfect game day appetizer, but it's pretty much a guaranteed HIT anytime your entertaining! Enjoy!
Chili Cheese Dip Queso Ingredients:
1 pound lean ground beef (90/10)
1 (1-ounce) package taco seasoning
1 teaspoon chili powder
1 (10-ounce) can Rotel Original Diced Tomatoes and Green Chilis, drained
1 ¼ cup low-sodium beef broth
2 teaspoons cornstarch
1 (16-ounce) block Velveeta cheese, cut into 1 cubes
1 cup freshly grated Cheddar cheese
How To Make Chili Cheese Dip Queso:
Add the ground beef to a large skillet over medium-high heat. Sprinkle over the taco seasoning and chili powder and use a wooden spatula to work in the seasoning and break the meat apart. Cook for about 8-10 minutes, or until fully browned and cooked through.
Stir in the Rotel and the beef broth and allow the mixture to come to a simmer.
In the meantime, add the cornstarch, along with 1 teaspoon of water, to a small bowl and stir to make a slurry.
Pour all of the slurry into the beef mixture and stir. Reduce the heat to medium-low to maintain a simmer and simmer for about 5-7 minutes, stirring occasionally, until slightly thickened.
Reduce the heat to low. Add the cubed Velveeta cheese and cheddar cheese to the beef and stir until melted. Serve with chips and enjoy!

Our Homemade Mess Chili Cheese Dip

Dip ingredients:
2- 15 oz cans of chili - .94 cents each
2- 10 oz cans of Rotel - .98 cents each
1 32 oz block of Velveeta
Bag of Tortilla chips 13 oz - .92 cents
CROCKPOT VELVEETA BEEF CHILI CHEESE DIP | Richard in the kitchen
In this video I show y'all how to make crockpot Velveeta Beef chili cheese dip. This dish is perfect for game day or any gathering and it's so easy to make. Creamy Velveeta cheese with browned ground beef and onions, chili and Rotel.
Shopping List:
1 or 2 lbs. Velveeta cheese block cut into about 1 inch cubes.
1 lb. ground chuck beef 80/20
1 small sweet onion, diced
1 can Rotel
1 small can of any brand of no bean chili
Milk or heavy cream, as needed or even a little beer for added flavor.
Salt and pepper to taste
Your choice of chips
Directions:
Cut the cheese into cubes and add to crockpot on high. Allow to partially melt.
Add the ground beef and onions to a skillet over medium high heat. Brown and drain excess grease. Season with salt and pepper. Stir in the chili and cook until warmed about 5 minutes.
Add the beef/onions/chili and Rotel to crockpot, stir, cover and cook about 45 minutes on high. Stirring occasionally.
Serve with chips.
