Easy Chili Con Carne Recipe | Easy Dinner Recipes | Cooking Up Love
Our easy Chili Con Carne Recipe is loaded with tender beef in a rich, spicy stew with peppers, onion and flavorful seasoning mix. We're using a hearty beef roast, adding a wet spice rub and cooking it low and slow in the slow cooker for a delicious and easy Chili Con Carne recipe destined to become a family favorite. A squeeze of lemon brightens the dish, and you can dial up the spiciness by increasing the amount of jalepenos and serrano peppers. We serve this over corn chips for delicious Texas Frito Pie.
There's no beans in this Texas chili con carne recipe, just a gorgeous hunk of marbled meat with tons of beefy flavor, a bunch of peppers, chopped yellow onions and beautiful whole tomatoes, a touch of beef broth and a handful of classic spices. It all comes together in a rich, delicious and easy chili con carne recipe that cooks all day in the slow cooker.

Chili Con Carne Recipe Ingredients
3 lb rump roast
24 oz whole tomatoes
1 red pepper, chopped
1 yellow pepper, chopped
1 medium yellow onion, chopped
1 jalapeno pepper, chopped
1 - 2 serrano peppers, diced
2 teaspoons smoked paprika
2 teaspoons oregano
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
zest of one lemon
juice of one lemon
1 cup beef broth
1 cup cilantro, chopped
Chili Con Carne Recipe Directions
Trim up a 2.5 - 3 pound rump roast, you can also use a chuck roast if you can’t find a rump roast. Score the top and bottom of the roast, with about ½ inch deep cuts in a crosshatch pattern. Season liberally with salt and pepper.
Heat 2 tablespoons of avocado or olive oil in a cast iron skillet over medium high heat. Sear both sides of the roast until nicely browned. Remove from heat and let cool while you make the spice rub.
Mix 2 teaspoons of smoked paprika, 2 teaspoons dried oregano, 1 teaspoon of cumin, ½ teaspoon of salt and ½ teaspoon of ground black pepper. Add the zest of one lemon, and the juice of the lemon and mix together into a paste.
Rub the paste into the seared roast, getting it down into all the cuts and grooves on all sides. Then add the roast to the bottom of the slow cooker.
Peel and chop one medium onion, and add it to the slow cooker. Chop one red and one yellow pepper and add it to the slow cooker. I’m adding one jalapeno, sliced, and a half of a serrano pepper, diced. You can add more or less based on how spicy you like your chili.
Add all the peppers to the slow cooker.
Next, add one 28 oz can of whole tomatoes, add the juice and I like to squeeze the tomatoes, giving them a crush.
Roughly chop about a ½ cup cilantro, and add to the slow cooker. Reserve the remaining cilantro for finishing the dish after cooking and for serving.
Measure 1 cup of beef broth and add to the slow cooker, look at how incredible this looks!!! This will cook for 7 - 8 hours on low, and it will be the most tender, delicious Chili Con Carne you’ve ever tasted!
Once it's finished cooking, use tongs or forks to break the roast into thick chunks of beef. It has great color from the searing, nice big pieces of peppers and tomatoes… top with more fresh chopped cilantro and serve!
Today we’re having Frito Pies, serving the chili con carne over corn chips and topping with favorites… cheese, sour cream, and a little more cilantro…. Yum, so delicious, I can’t wait for you to try this one :)
