Thai style peanuts - Extremely addictive | Chili Garlic Peanuts
Salted peanuts tossed with kaffir lime leaves, typically used in Thai curry sauces but here I have fried them crisp along with some dry red chillies and garlic. They are extremely addictive - These peanuts are served all over Thailand, usually with some kind of dried fish mixed in which I am not a fan of, hence I have omitted the dried fish and kept the other amazing flavours.

Ingredients
350 gms salted peanuts
2 garlic cloves sliced
3 dry red chillies
5 to 6 Thai Kaffir lime leaves
1/4 tea spoon citric acid
2 tabe spoons oil
Method
Place a pan on medium heat and add 2 table spoons oil
Add 2 garlic cloves sliced and fry until golden brown
Turn the heat off and add 3 dry red chillies and 5 to 6 Thai Kaffir lime leaves
Fry these for a minute until they crisp - The oil will be still hot and will crisp them without burning the same because we have turned the heat off
Remove this into a large bowl and discard the remaining oil
Wear a disposable glove in one hand and mash all of this together
Remove the lime leaf stems if any
Please note wearing a disposable glove is very important because your hands will burn with the red chillies if you do this without a glove
Add 350 gms salted peanuts to this and mix everything well, incorporating all these favours into the peanuts
Add 1/4 tea spoon citric acid for a additional lemon punch to this
Mix everything well
Serve this at your house Parties or store in an air tight jar for you to enjoy

BESAN MASALA PEANUTS:
1 Cup Peanuts
1/4 Cup Besan (Gram Flour)
1 Tsp Red Chilli Poweder
2 Pinch Turmeric Powder (Haldi)
2 Tbsp Rice Flour (Chawal ka Aata)
2 Tsp Ginger Garlic Paste
Oil for Frying
Salt to Taste
SEASONING:
1/2 Tsp Chaat Masala
1/2 Tsp Powdered Sugar
1/2 Tsp Red Chilli Powder
1/4 Tsp Garam Masala

1 cup dry roasted unsalted peanuts (if you use salted peanuts, just leave out the salt)

1/4 tsp habanero pepper powder
