Lithuanian Cold Beet Soup (Šaltibarščiai)
-1/2 cup Pickled Beets, grated
-2 TBSP Pickled Beet Brine (optional)
-1 Cucumber, small dice
-1 1/2 cups Kefir (or plain dairy-free Yogurt with a squeeze of Lemon Juice)
-2 TBSP fresh Dill, chopped
-1 Green Onion, chopped
-1/4 tsp Salt, or to taste
-1/4 tsp Black Pepper, or to taste
-1 or 2 Eggs, boiled (I used Pickled Quail Eggs)
-1 cup Baby Potatoes, boiled whole
-1 TBSP Butter, unsalted
-1 tsp dried or fresh Dill
-1/8 tsp/pinch of Salt
In a bowl, add grated Pickled Beets, diced Cucumber, fresh Dill, the whites of a Green Onion, Kefir/Yogurt, Salt, Pepper, and Beet Pickling Brine. Stir together, cover, and refrigerate overnight or for at least 4 hours for flavors and color to develop.
Before serving, boil eggs to your preference. Shock in an ice bath and peel.
Boil Potatoes in salted water. Drain and add back to the pot with Butter, dried Dill, and a pinch of Salt. Stir to coat and serve warm with the soup. Enjoy!

1. Beetroot - 500 g.
2. Cucumbers - 2 pcs .
3. Eggs - 2-3 pcs.
4. Green onion - 1 bunch
5. Water - 700-800 ml
6. Kefir - 1 cup
7. lemon acid 0,5 teaspoon
8. Salt - 0,5 tablespoon
9. Sugar - 3 tablespoons
Food ice (optional) - 100 g
Sour cream - 3-4 tablespoons
Pepper to taste

Ingredients:
1. 1 cucumber
2. 2 cups boiled beetroot
3. 1 clove garlic
4. ½ cup curd
5. Salt to taste
6. 2 tsp pepper powder
7. 1 tbsp lemon juice
8. 5-6 ice cubes
9. Cucumber
10. Cream
11. Dill leaves
Recipe:
1. Add cucumber, beetroot, garlic, curd, salt, pepper powder, lemon juice and ice cubes in the blender jar of the Usha Trienergy+ .
2. Blend all the ingredients together to make thick soup.
3. Serve cold and garnish with chopped cucumber, cream and dill leaves

The inspiration for this Cold Polish Cucumber soup with croutons in Polish Chłodnik z Ogórka z grzankami came to me thanks to my amazing friends. In this video I use home grown vegetables that I got from my friends to make this refreshing, fulfilling soup.
Soup is full of home grown cucumbers, zucchini, and peppers, with a lot of polish flavors like chives, dill, radishes. To add some texture and flavor I also show you how to make your own croutons.
INGREDIENTS
Soup:
2 cloves of garlic (chopped)
fresh dill (chopped)
fresh scallions (chopped)
fresh chives (chopped)
3 radishes (finely slices for garnish)
1 small chili pepper (chopped, 1/2 goes into the soup)
1 small cubanella pepper (chopped)
1 cucumber (grated)
1 zucchini (grated)
1 yellow squash (grated)
1 cup of greek yogurt
2 cups of kefir
salt & pepper
Croutons:
2 slices of bread of you choice (chopped 1 inch) here I use spelt bread
1/2 chili pepper
salt & pepper
olive oil
cayenne pepper
