How To make Chinese: Sesame Chicken 2
3/4 lb Chicken Breasts,
Skinless and Boneless 3 tb Flour
2 tb Sesame Seeds
1 tb Soy Sauce
1/2 ts Peanut Oil
1 tb Maple Syrup
Red Lettuce Leaves 1 tb Dry Sherry
1 lg Tomato, ripe
1 ts Fresh Ginger, chopped
Pepper to taste 1/2 ts Chinese Five spice
- powder Preheat oven to 350 degrees. Cut chicken into pieces about 1 by 2 inches. Mix soy sauce, maple syrup, sherry, ginger and Chinese Five Spice together. Add chicken and marinate 20 minutes, turning once. Meanwhile, place sesame seeds on a baking tray and toast in oven for 10 minutes or until slightly brown. Drain chicken, reserving marinade. Dredge chicken in flour seasoned with a little salt and pepper. Shake off any excess. Heat oil in a non-stick skillet. Add chicken and brown, about 1 minute per side. Spoon marinade over chicken. j Reduce heat and saute another minute, or until chicken is cooked through. Remove from heat and roll chicken in sesame seeds. Wash and dry lettuce leaves. Line a serving plate with leaves, and spoon chicken on top. Cut tomato into wedges and use to garnish plate. Ingredients for Sesame Chicken:
- Boneless Chicken thighs, cut into 1” pieces- 350 gms
For the Marination:
- Salt- 1/2 tsp
- Pepper Powder- 1/2 tsp
- Grated Garlic- 1 tsp (2-3 cloves)
- Whisked Egg- 1
Sauce:
(Tbsp- tablespoon, tsp- teaspoon)
- Tomato Ketchup- 2 tbsp (US spoon measure)
- Dark Soy Sauce- 1 tbsp
- Honey- 1.5 tbsp
- White Sugar- 2 tbsp
- White Vinegar- 2 tsp
- Water- 2 tbsp
Other Ingredients:
- Corn Flour- 3 tbsp measure
- Corn Slurry- 1 tsp corn flour mixed in 4 tbsp water
- Sesame Oil- 2 tsp
- White Sesame Seeds- 2 tsp
- Spring Onion Greens- 3 tbsp
- Oil for deep frying
Preparation:
- Cut the boneless chicken thighs into 1” pieces. Marinate with items specified. Mix well and set aside for 30 mins. After 30 mins add the corn flour and mix well to make it ready for frying.
- Take a small bowl and add all the ingredients specified for the sauce. Mix and set aside for use later. Make sure the sugar is dissolved before adding it to the wok later.
Process:
- Heat oil in a pan/wok for deep frying.
- Drop in the battered chicken pieces one at a time to not crowd the pan. Fry on medium heat for around 5-6 mins till golden. Remove and keep on a plate. Fry the rest in batches.
- Now take a wok and heat it.
- Mix the sauce once to make sure the sugar is dissolved and add it to the wok.
- Keep stirring it on medium heat for 1-2 mins till the sauce is cooked and starts thickening.
- Add the corn slurry, mix and cook it for a minute and then add the fried chicken pieces.
- Mix it well and then add the sesame oil. Stir fry it on high heat for another minute till the chicken pieces are coated well with the sauce.
- Once nearly thickened, add the sesame seeds, give a mix and then add the chopped spring onion greens. Stir fry for a minute and serve hot.

Sesame Chicken
Sesame chicken is made by marinating chicken breast pieces with salt, pepper, garlic powder, paprika powder, all purpose flour and corn starch and frying it in a pan. This fried chicken is then sauteed in a sesame flavoured sauce made with butter, soy sauce, oyster sauce, tomato kethup and brown sugar. The use of sesame seeds furnishes an auxiliary nutty flavor that is delicate to the tongue. While the use of sesame seeds in dishes is oftenly associated with Korean recipes, this chicken dish is adapted from the Chinese cuisine. Sesame chicken is best served on top of a big bowl of hot steaming rice.
INGREDIENTS
For the chicken:
500 grams chicken breast (sliced into cubes)
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon paprika powder
2 tablespoons all purpose flour
3 tablespoons cornstarch
¼ cup cold water
For the sesame sauce:
2 tablespoons unsalted butter
½ cup soy sauce
1 tablespoon oyster sauce
¼ cup tomato ketchup
1 tablespoon brown sugar
