How To make Chinese: Shrimp Fried Rice
CATE VANICEK:
c Cold cooked rice 3 Eggs, slightly beaten
1/3 c Raw shrimp, cleaned and
Slivered 1/3 c BBQ pork
1/2 ts Cornstarch
1 ts Wine
1 tb Soy sauce
1/4 ts MSG (optional)
2 Green onions, diced
1 ts Salt
Peanut oil Pan-fry the eggs into thin sheets in a frying pan. Remove and cut into small strips. Heat peanut oil over high heat. Stir-fry shrimp and chicken. When done, sizzle in 1 tsp. wine. Add the cooked rice. Stir until well-mixed. Add 1 tbsp. soy sauce, 1/4 tsp. MSG and the diced green onion. Add 1 tsp. salt (or more). Stir-frry for at least 10 minutes over MEDIUM heat. Add egg strips. Serve hot. Note: The cooked rice should not be sticky. It might even be better to use day-old rice. If you must use freshly cooked rice, you may spread the rice on a cookie sheet and let cool completely before you stir-fry it. SOURCE: Stella Chan's Secrets in the Art of Chinese Cooking.

What you'll need:
1 Tbsp peanut or vegetable oil
1/2 tsp sesame oil
1 large egg
1/3 cup frozen peas and carrots
2 Tbsp chopped onion
1/2 pound 41-50 shrimp, peeled, deveined and thawed
3 cups cooked rice (1 cup uncooked, cooked as seen here: )
1/2 tsp salt
1/4 tsp sugar
1 Tbsp lite soy sauce
1/2 tsp mushroom flavored DARK soy sauce

Ingredients:
Serves 3 - 4 pax

160g (5.64 oz) shrimp / prawns, deshelled & deveined
1 bulb garlic, chopped
380g raw jasmine rice (Cooked with 450ml of water. If you're using a rice cup, measure 3 cups of rice and 3 cups of water and cook them together.)
1.5 teaspoons chicken stock powder
1 teaspoon ground black pepper
1 teaspoon salt
6 eggs, beaten
1 tablespoon fish sauce (you can use light soy sauce too)
5 tablespoons premium dark soy sauce (reduce this if your sauce is salty)
3 stalks spring onion, chopped
