How to Make Amaretto Truffles

Ingredients
•¾ c Disaronno Liqueur
•1 box vanilla wafer cookies, processed fine
•½ c walnuts, chopped
•½ c almonds, chopped
•¾ c chocolate-hazelnut spread
•¾ c powdered sugar
•2 Tbsp unsweetened cocoa
•¼ c shredded coconut, for garnish
Directions
1.Combine all ingredients, except for garnish, in a large bowl.
2.Stir until completely incorporated; chill for 30 minutes.
3.Roll dough into approximately 48 1-inch balls.
4.Roll each ball in shredded coconut until completely covered.
5.Place on a parchment-lined pan and refrigerate for 1-2 hours.

250g / 1 cup Chocolate
100g / ⅓ cup Butter
3oz Amaretto
2 Egg yolks
80g / ⅓ cup Icing Sugar
Cocoa powder / anything else for coating
Melt the chocolate slowly with Amaretto
Add the butter in small cubes
When it’s well incorporated, take off the stove
Add the rest, mix well until thick (add icing sugar if necessary)
Leave in the fridge for at least an hour
Make small balls, coat them with chocolate powder (or any other powder such as hazelnut, coconut, matcha, etc.)
Reserve in the fridge

7 oz (200 grams) dried unsweetened coconut (finely shredded)
1 can (14 oz / 396 grams) of sweetened condensed milk
6 oz (180 grams) dark chocolate
For rolling: dried unsweetened coconut, chocolate vermicelli, chopped nuts, etc.

CHAMPAGNE TRUFFLE RECIPE:
8 oz. dark chocolate (or preferred chocolate)
1/2 cup of heavy cream
1/4 cup of champagne
2 Tbsp of Cognac
About 1/2 cup of sugar for coating
AMARETTO TRUFFLE RECIPE:
8 oz. milk chocolate (or preferred chocolate)
1/2 cup of heavy cream
2 Tbsp of amaretto liqueur
About 1 cup of walnuts, finely chopped
COCONUT RUM TRUFFLE RECIPE:
8 oz. white chocolate (or preferred chocolate)
1/2 cup of heavy cream
2 Tbsp of spiced rum
About 1 cup of coconut shavings
DIRECTIONS:
Place your chocolate in a bowl. Bring your heavy cream to a simmer in a sauce pot. Add your hot heavy cream to the bowl of chocolate, and let sit for about 2 minutes, so the chocolate can melt. Once the chocolate has melted, mix the two ingredients together until completely smooth. Once the chocolate mixture is completely smooth, add in your desired alcohol. Mix all the ingredients well, until the chocolate is completely smooth. Set bowl in your refrigerator, for at least 4 hours, until chocolate has hardened.
Then take a small ice cream scoop and scoop out desired amount. Place the scoop into your toppings, covering all sides. Then with your washed hands, form your chocolate into a ball. Continue with all of your chocolate. Set in the refrigerator until 30 minutes before you serve.
