Heavenly CHOCOLATE RUM BALLS
These delectable CHOCOLATE RUM BALLS exceed all expectations, getting top marks no matter which way you prepare them - with rum-soaked cherry centres or a luscious rum buttercream.
This recipe for CHOCOLATE RUM BALLS has been perfected over the years by my sister Dana, who always goes the extra mile to ensure friends and family enjoy themselves. Dana gives us two very different ways of filling them - I bet she’s gunning for points with Santa for being extra nice this year.

Now, on to the details of these fabulous treats!
CHOCOLATE COATING – I’m hesitating to call the rich outside finish for these cookies a dough since we don’t bake them. Instead, we blend premium chocolate with toasted ground hazelnuts (feel free to try the recipe with ground almonds too), icing sugar, pasteurized egg whites and a premium dark rum. I love the way the coating comes together when it’s mixed by hand.
SOUR CHERRIES – The first way you can fill the cookies is with sour cherries soaked in rum. Try to find premium cherries as they tend to be more firm and easier to roll.
BUTTERCREAM – The buttercream for this recipe is a classic combination of egg yolk, sugar and butter, with the rum adding a subtle flavour. Freezing the small knobs of cream filling ensure they won’t melt as you wrap them in the chocolate coating.
OUTSIDE COATING – I like distinguishing the two flavours by rolling them in two unique coatings. The toasted ground hazelnuts pair perfectly with the cherry-filled balls, while the white chocolate adds yet another wondrous taste to the cream filled ones.

My easy no bake rum balls have a wonderful chocolatey rum-infused flavor that you’ll just love! They’re a holiday favorite that’s delicious year round! Rum balls might be my favorite cookie/candy/amazingly delicious treat, I love how the toasted nuts, cocoa, cookies, and rum come together in a moist chewy, crunchy bite-sized bit of wonder! And yes you can make these with bourbon, brandy or whiskey too. Do these count as Cristmas cookies??

Yield: 30 Bourbon Balls
Bourbon Balls Recipe
Ingredients:
Dough
2 cups pecans
2 cups crushed vanilla wafers (approximately 8 ounces)
¼ cup unsweetened Dutch-processed cocoa
2 cups confectioners’ sugar plus more for rolling
3 tablespoons light corn syrup
½ cup bourbon, such as Jack Daniel’s
Finishing
¼ cup cocoa powder
¾ cup confectioners’ sugar, divided
Rum ball variation
2½ cups vanilla wafer crumbs
1 cup finely ground nuts or shredded coconut
1 cup confectioners’ sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons light corn syrup
½ cup Meyers rum (light or dark) or your favorite brandy
Extra cocoa or finely ground instant coffee, for rolling
Directions:
First, Preheat oven to 325 degrees. Roast the pecans on a parchment-lined baking sheet pan. Bake for 3-5 minutes so they are nice and toasted.
Then, in a food process, process 44 vanilla wafers into crumbs. Add pecans to crushed wafers process until you get a fine powder. Transfer to a medium bowl.
I use this Bourbon from a distillery in Evanston Illinois. The underlying caramel notes are perfect for this bourbon balls recipe. And don't skimp on the bourbon!
I also use my private label vanilla - it's aged in a cognac barrel, with citrus, candies fruit notes and spices. It smells so good in here, The bourbon, chocolate and roasted pecans make the kitchen very aromatic.
Finish the balls: take 1 tablespoon full and roll them into a ball. Perfectly moistened by the bourbon.
Sift remaining ¼ cup cocoa with ¼ cup of remaining confectioners’ sugar in a large mixing bowl. Watch the video to see the mixture consistency.
Coat the bourbon balls in the cocoa-sugar mixture to coat.
