NEW YORK ROLLS Crème Bueno et Nutella ( Recette croissant )
Voici la meilleur façon de réussir les New York Rolls.
Ma pâte feuilleté est inratable si vous respecter bien mes techniques.
Pâte feuilleté pour croissant.
????Recette:
Détrempe:
550 gr de farine T55 KORO
115 gr d'eau
140 gr de lait
65 gr de sucre
100 gr beurre pommade
20 gr levure fraîche ou 13 gr levure sèche
10 gr de sel
Feuilletage:
250 gr de beurre mou 82 % matière grasse (cet à dire le moins d'eau possible)
taille des moules:
4 grandes: 14 cm de largeur et 4.5 cm de hauteur
3 petites: 8 cm de largeur et 4.5 cm de hauteur
Note important:
Préparer le beurre 15 minutes avant de sortir la pâte feuilleté du réfrigérateur. Pour obtenir un beurre ramolli il faut sortir le beurre du frigo quelques heures à l'avance, cette étape est la plus importante.
Mettre le beurre au réfrigérateur 15 minutes, attention le beurre ne doit surtout pas durcir.
Si le beurre durci vous obtiendrez des grumeau de beurre, et cella risque d'avoir une mauvaise pâte feuilleté.

The EASIEST Mini Chocolate Swiss Rolls (with minimal ingredients) ????
Looking for an easy delicious cake recipe for that special occasion where you need to impress? Look no further! ????

You’ll need
3 eggs
½ cup granulated sugar
2 tbsp hot water
½ cup all-purpose flour
2 tbsp cocoa powder
1 tbsp starch
2 tsp vanilla sugar
For the filling;
Apricot jam
100 ml milk
75 g chantilly cream powder
For the top;
200 ml heavy cream
80 g milk chocolate
160 g dark chocolate
Here's how
1- In a whisking bowl, beat 3 eggs with ½ cup of granulated sugar until fluffy.
2- Add 2 tbsp of hot water while still beating.
3- Sift ½ cup all-purpose flour, 2 tbsp cocoa powder, 1 tbsp starch and 2 tsp vanilla sugar into the bowl and continue beating.
4- Line a baking pan with parchment paper to prevent from sticking.
5- Pour the batter and spread it evenly.
6- Bake in an oven preheated at 170 degrees for about 10 minutes.
7- Once the cake comes out of the oven, remove it from the baking pan and while it’s still hot, roll the cake and let it cool. Rolling it while it’s still warm helps to prevent cracks later.
8- After cooled, lay it flat again, and divide it into 6 equal pieces.
9- Spread some apricot jam evenly over the top of the cake. You can use any other jam or marmalade that you like.
10- Next, spread a thin layer of chantilly cream on top and roll again. I prepared the cream whisking 75 g of chantilly cream powder with 100 ml of milk.
11- For the top, heat 200 ml of heavy cream. Remove from the heat before it boils, add 80 g milk chocolate and 160 g dark chocolate and mix until they are fully melted. Then, let it cool stirring occasionally.
12- Cover the top and sides of each cake roll with the cooled chocolate sauce.
13- Let them rest in the refrigerator for about 4 hours.
14- Mini Chocolate Swiss Rolls are ready, decorate as you desire and serve! Hope you enjoy!

When it comes to making desserts, sponge is a real multi-talent. Whether it's layer cakes, Swiss rolls or cute little cupcakes, sponge can do it all. For this recipe, we've used this versatile batter to create delicious filled rolls with an eye-catching design. You're sure to fall in love with the results!
You'll Need (for 8):
For the sponge dough:
- 7 egg whites
- 2.6 oz sugar
- 7 egg yolks
- 1 pinch salt
- 7 oz flour
- 1 oz cocoa powder
For the cream filling:
- 8.8 oz soft butter
- 8.8 oz powdered sugar
You'll also need:
- 1 banana
- some chocolate beans (or stars)
Here's How:
1. Beat the egg whites using an electric whisk until they're foamy and add 2.5 oz of sugar. Now continue to beat the egg whites until they're stiff.
2. Next, beat the egg yolks with salt and the other half of the sugar until they're foamy. The mixture should double in size.
3. Fold the beaten egg whites into the eggs yolks before adding the flour and mixing. Split the dough mixture into two bowls and add the cocoa powder to one of the bowls.
4. Fill a piping bag with the dark dough and draw a grid-like pattern on some baking parchment on a baking tray. Now spoon the light dough onto the grid and carefully spread it out. Bake the dough in a preheated oven at 375°F for nine minutes with the top and bottom heat on.
5. Once baked, place the still warm dough onto a clean dishcloth and roll it up. Just make sure it doesn't tear!
6. Roll out the cooled dough from the dishcloth and cut it into eight equally-sized rectangles.
7. To prepare the cream filling, mix the butter with the icing sugar using an electric whisk. Fill a piping bag with the cream mixture and pipe it onto the sponge rectangles. Keep about a third of the cream back for decoration. Cut the banana in half and cut it into four lengthways. Place a piece of banana onto the cream and roll the sponge up. To finish, pipe the remaining cream on top of the rolls and decorate with some chocolate beans.
