How To make Chow Chow
1/4 ea Tomato, green (1/4 peck)
1/4 ea String beans (1/4 peck)
3 c Lima beans
3 c Corn
5 ea Bell pepper, green
1 qt Onion
1 ea Cauliflower, large head
2 c Sugar
3 qt Cider vinegar
1/2 c Salt
2 T Celery seed
2 T Mustard seed
1/2 lb Mustard, dry
1 T Turmeric
Cut the string beans in pieces; break the cauliflower into flowerets, add the lima beans and corn and cook all four ingredients about 25 minutes. Chop the onions, peppers, and tomatoes. Heat the vinegar and when hot, add the sugar, salt and spices which have been mixed together. Drain the water from the cooked vegetables and add to the hot vinegar. Then add the chopped vegetables and cook about 25 minutes, stirring constantly. Pour into sterilized jars and seal. Source: Pennsylvania Dutch Cook Book - Fine Old Recipes, Culinary Arts Press, 1936.

How To Make Chow Chow
How to make chow chow. Today were going to make chow chow from veggies weve harvested from the garden. Chow chow is sometimes called end of the garden relish because you use so many different things. It is a really good relish that goes great with pinto beans, hot dogs, polish sausages and about any other meal.
RECIPE!!!!
chop in to small pieces
4 cups cabbage
4 cups sweet onions
4 cups green tomatoes
4 cups bell peppers (any kind you like)
in a large bowl add 1/2 cup of canning salt to veggies mix up and let set at least 4 hours or over night in the fridge.
When they are ready rinse and drain.
BRINE
In an enamal or stainless pot
5 cups sugar
2 cups water
4 cups vinegar
2 Tbs mustard seed
1 Tbs celery seed
1 1/2 Tsp tumeric
Bring to a boil, Then add your veggies to the pot and bring back to a boil for about 5 minutes. then laddle into hot pint jars, clean jar rims, put on lids and process in boiling water bath canner for 10 minutes.

OLD SCHOOL CHOW CHOW
This is my recipe for chow chow
You can use a variety of veggies
But this is how I make mine
My main vegetable is cabbage
And I like using multiple colors in my recipe
RECIPE ( for veggies)
1 green cabbage sliced
1 diced green bell pepper
1 diced sliced red bell pepper
3 sliced banana peppers
1 chopped green jalapeño
1 chopped white onions
1 cup grated carrots
1 sliced yellow bell pepper
2 tablespoons kosher salt or pickling salt
2 tsp celery seed
2 quarts water
RECIPE FOR ( brine)
3 cups white vinegar
1 cup Apple cider vinegar
2 cups white sugar
1 cup light brown sugar
( place all ingredients in pot and bring to boil )
Place all veggies in large bowl
Add salt and celery seeds
Add water and let sit 1 hour
Drain veggies add put in clean pot add brine and simmer for 1 hour or until tender
Add veggies to to jars and fill completely to top
Fill with remaining juice and
Place lids on jars tightly
Add jars back to boiling water for 15 minutes
Remove and let cool
Place in cool dark place for 30 days
Enjoy!!!!!
