How To make Chunky Date, Coconut and Almond Granola
2 c Old-fashioned oats
3/4 c Whole almonds; halved
1/2 c Sweetened flaked coconut
1/2 c Raw cashews
1/3 c Firmly packed brown sugar
1 1/2 ts Ground allspice
1 ts Ground cinnamon
1/4 c Unsalted butter
2 tb Honey
1 c Packed pitted dates
each cut crosswise :
into thirds Preheat oven to 300 F. Mix first 7 ingredients in large bowl. Melt butter with honey in heavy small saucepan over low heat. Pour over granola mixture and toss well. Spread out mixture on cookie sheet. Bake 20 minutes, stirring occasionally. Add dates; mix to separate any clumps. Continue to bake until granola is golden brown, stirring frequently, about 15 minutes longer. Cool. (Can be made 2 weeks ahead. Store airtight at

It’s crazy easy to make and you can really use any nuts and seeds that you like. Today I’ve used hazelnuts, walnuts and almonds but I love also adding cashews, pecans and even peanuts.
*Tip - Make sure to press it down with a back of a spoon before the second cook and allow to fully cool down before breaking up into chunks ❤️

Ingredients:
3 cups (270g) rolled oats
1 cup (140g) almonds
1/3 cup (40g) peanuts
1/2 cup (60g) dried cranberries or sour cherries
2 tablespoons (12g) desiccated/shredded coconut
1/4 teaspoon salt
1/2 cup +1½ tbsp (200g) honey or agave syrup
1/3 cup + 1 tbsp (80g) coconut oil
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 340F (170C). line a 10” x 8” (25 X 20 cm) pan with parchment paper and set aside.
2. In a large bowl mix all dry ingredients. Add wet ingredients and mix until well combined.
3. Spread in baking pan, pressing down very firmly.
4. Bake for 30 minutes or until golden. Let cool completely.
5. Remove from the pan and cut into bars.

Healthy Granola Recipe
Today I'm going to show you how to make homemade granola.
This healthy granola is made without oil, and is lower in sugar than traditional recipes.
It's full of delicious granola clusters, so it's great for either breakfast or snack.

HOMEMADE GRANOLA RECIPE
(makes 16 servings)
Ingredients:
3 cups rolled oats (270g)
1/2 cup chopped almonds (70g)
1/2 cup chopped walnuts (60g)
1/2 cup pumpkin seeds (70g)
1/2 cup sunflower seeds (70g)
2 tbsp flaxseed meal
2 tsp ground cinnamon
1/2 tsp salt
1/2 cup unsweetened applesauce (130g)
1/3 cup maple syrup, honey or agave (80ml)
1 egg white
1/2 cup dried cranberries (or other dried fruits) (70g)
NUTRITIONAL INFO (per serving):
185 calories, fat 10g, carb 19.5g, protein 6.2g
Preparation:
In a bowl, combine all the dry ingredients, rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, flaxseed meal, cinnamon and salt.
In separate bowl, mix together applesauce and maple syrup.
Pour the wet ingredients into the dry and stir well for a minute, to fully incorporate and turn sticky.
Whisk egg white until foamy and add to the granola mixture, and mix well.
Add the dried fruits, and mix one more time.
Spread the granola mixture onto a lined baking tray (13x9 inch in size) and press it well using a spatula.
Bake at 325F (160C) for 30 minutes.
Let it cool complete, then break into larger or smaller chunks.
Serve with yogurt or milk, and top with some fresh berries.
