How To make Cilantro Waffle Chips with Chunky Guacamole
1 tb Unsalted butter
1/2 c All-purpose flour
1/2 c Cornmeal
1 1/4 tb Double-acting baking powder
1/4 ts Baking soda
1/4 ts Salt
1/8 ts Freshly ground black pepper
1 c Buttermilk
1 lg Egg
1/4 c Chopped fresh cilantro
1 ts Finely chopped jalapeno
-pepper 2 tb Corn oil
Sour cream or plain yogurt -for additional topping Preheat waffle iron. Preheat oven to 200'F. Melt butter; reserve in a large bowl, whisk together flour, cornmeal, baking powder, baking soda, salt and pepper to mix. In another bowl, beat together buttermilk and egg until well blended and whisk into dry ingredients. Stir in cilantro and jalapeno. Fold in corn oil and melted butter, mixing only until combined. Lightly butter or spray grids of your waffle iron, if needed. Brush or spray grids again only if subsequent waffles stick. Spoon out 1/2 cup of batter (or amount your waffle maker's manufacturer suggests) onto iron, spreading it evenly to edge of grids with a metal spatula or wooden spoon. Close lid and bake until golden and crispy. Remove waffle from iron and separate into hearts or cut into whatever size pieces you want. Place on a baking sheet, in a single layer, and put into preheated oven. Continue making rest of batch and putting finished waffles on sheet in oven. The waffles should bake in oven for 1 to 1 1/2 hours, or until they are very crispy. Serve immediately or cool on a rack and serve at room temperature.

Chicken Popper Ingredients:
8 boneless/skinless chicken thighs (you can use chicken breast fillets as well)
4 jalapeños
4 oz of cream cheese
1/2 cup cheddar cheese
1/2 cup feta cheese (you can substitute with blue cheese or any other)
16 pieces of bacon
1 cup of BBQ sauce (any kind you like)
1 tsp garlic powder
black pepper - to taste
salt – to taste
Chunky Guacamole Ingredients:
5 avocados
3 tomatoes
handful of cilantro
1/2 of a small onion
1 medium red bell pepper
1 jalapeno
4 tsp lime juice
1/2 tsp black pepper
1/2 tsp garlic powder
1 tbsp salt
1 tbsp Tabasco sauce
2 tsp garlic salt
NOTES:
Grilling Chicken Poppers: Preheat grill to 350 degrees and place chicken poppers on the grill to cook over indirect heat for about 25-30 minutes. Turn chicken poppers on the grill every 5 minutes to cook evenly, and coat with BBQ sauce each time you turn them. Before the chicken poppers are done, coat with BBQ sauce one last time. Be sure chicken is cooked through and juices run clear. If you have a meat thermometer check the internal temperature, it’s ready when the thickest part of the chicken reaches 165F.
Baking Chicken Poppers in Oven without a baking rack:
Preheat oven to 400 degrees and place chicken poppers on a foil lined baking sheet. Bake for 25 minutes, remove from oven and line another baking sheet with foil and place chicken poppers rotating them on the freshly lined baking sheet before baking for an additional 25 minutes. Reduce heat to 375F, line another baking sheet or pan before placing chicken poppers. Brush each chicken popper with BBQ sauce, then use tongs to flip them over to the other side, and brush the tops with more BBQ sauce and return to the oven for 5 minutes. Remove from oven, brush on more sauce to both sides of chicken poppers, and place under broil setting for no more than five minutes so bacon can get crispy. Remove from the oven and let sit for at least 10 minutes before serving.
**I recommend changing the baking sheets in order to not have so much bacon fat on your chicken poppers and for a crispier exterior.
*** Always wash your meat before cooking and wash your hands after handling raw meats. Sorry guys the science geek in me just has to say this even though everyone knows this already. ????

Today, I am serving the cilantro lime long grain white rice with cilantro lime chicken thighs, homemade guacamole and fresh tomato salsa, aka, Pico de Gallo.
