24 ea Cherrystone clams
4 T Green pepper, chopped
1 T Lemon juice
1 ea Lg Garlic clove, minced
8 T Butter
6 T Seasoned bread crumbs
Preheat oven to 450f. Open clams and discard top shell. Place clams in a shallow baking pan. In a saucepan, melt 4 Tbsp. butter and saute the garlic and green pepper for 2 - 3 minutes. Ingredients:
24 Top-Neck Clams
6 oz clam juice
¼ cup dry white wine
¼ cup chopped celery
¼ cup chopped leek
3 cloves garlic minced
¼ cup chopped parsley
2 tbs chopped celery leaf
2 cups torn seedless Italian bread
4 tbs unsalted butter
1 tbs salt
1 tsp black pepper
Directions:
1.) Wash clams very well with a clam brush.
2.) Soak clams in cold water for one hour. This will purge the clams of all sandy materials.
3.) Place clams in a large saucepot with a lid.
4.) Place white wine and clam juice in with the clams. Fire pot on high heat.
5.) Cover, wait for a boil and watch.
6.) As clams begin to open remove them from pot.
7.) Pour all liquid in a bowl to be used later on.
8.) Once clams have cooled, remove the meat and chop it.
9.) Separate clamshells and wash thoroughly. Recipe should yield about 30 clams.
10.) Preheat the same saucepot to medium-high.
11.) Add in butter, celery, leeks and garlic. Season with salt and pepper.
12.) Cook for 5-8 minutes or until vegetables are slightly soft.
13.) Turn off heat.
14.) Strain clam liquid in a fine mesh strainer back into the pot with the vegetables.
15.) Mix in clam meat, torn bread, parsley and celery leaf.
16.) Scoop 1-2 tbs of clam mix into each shell.
17.) Place clams on a lined baking sheet and broil on high for 3-4 minutes or until golden brown.
18.) Serve hot and serve with lemon wedges.

INGREDIENTS
24 littleneck or cherrystone clams
4 slices thick cut bacon, cut into 1/4 inch pieces
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper
2 cloves garlic, minced
1 tbsp italian seasoning
1 cup panko bread crumbs
3 tbsp freshly grated parmesan cheese
1 tbsp lemon zest
1 tbsp chopped fresh parsley
2 tbsp olive oil
INSTRUCTIONS
Preheat oven to 350 degrees. Wash the clams and rinse to remove any sand. Arrange the clams on a baking sheet and roast in the oven until opened, approximately 4-5 minutes. Discard any unopened clams.
Remove the clams from the shells. Roughly chop the clams and set aside.
In a large skillet over medium heat, cook the bacon until almost crisp. Remove the bacon from the skillet with a slotted spoon and set aside. Add the onion and bell pepper to the pan. Cook until softened, approximately 3 minutes. Stir in the garlic and cook for an additional minute. Sprinkle with the Italian seasoning.
Turn off the heat. Add the bread crumbs, cheese, lemon zest, parsley and clams to the pan tossing to combine thoroughly. Season with salt and pepper, to taste.
Fill the clam shell halves with a tablespoon of stuffing and arrange on a baking sheet stuffing side up. Top each clam shell with a piece of bacon. Drizzle with olive oil.
Bake the clams casino at 450 degrees for 5 minutes or until golden brown and crispy. Sprinkle with additional parmesan cheese and chopped parsley, if desired prior to serving.
