How To make Cold& Spicy Noodles
Stephen Ceideburg 1/3 c Finely chopped cilantro
2 tb Tahini
2 tb Miso
1 t Dark sesame oil
3 tb Orange juice
1/2 ts Red pepper flakes
2 Green onions, finely chopped
1/2 Red bell pepper, minced
4 c Cooked udon or soba noodles
-drained, rinsed and drained -again
This can be prepared a day ahead. The bit of tahini (sesame paste) creates a creamy sauce that contrasts well with the crisp vegetables. In a large bowl, combine cilantro, tahini, miso, oil, orange juice, and red pepper flakes. Toss in green onions, bell pepper and noodles. In this video I'll show you how to make a spicy kind of Korean icy cold noodles called bibim-naengmyeon. It's ice cold and made with a slightly sweet, vinegary, spicy sauce, and cucmber and pear. When you eat it, first thing you need to do is mix it up in the bowl, which is why it’s called bibim, which means “mixed up” in Korean (like bibimbap - mixed rice).

Ingredients
1/2 lb spaghetti
5 tbsp extra virgin olive oil
5 to 6 cloves garlic, sliced or chopped
2 to 3 green onions, chopped
1 red chili or 1 tsp red chili flakes
1/4 tsp salt
1/8 tsp black pepper
2 tbsp yondu, Korean fermented vegetable sauce (you can substitute with fish sauce)
1/2 tsp mushroom soy sauce or regular soy sauce
10 to 12 oz shimeji mushrooms, separated into individual stalks or any mushrooms of your choice, sliced

all-purpose flour 300g
salt 4g
gluten cake:
soda 1/2 tsp
salt 1/2 tsp
yeast 1/2 tsp
peanut dressing:
peanut butter 1 tbsp (you could add more if you like)
vinegar 100ml
white pepper 1tsp
minced black sesame 1 tbsp
sesame oil 1 tbsp
salt 1.5 tsp
3 cloves of garlic
3 star anise
dried ginger 4g
sichuan pepper 1tsp, 3-4 g
2 bay leaves
fennel seeds 2g
water 450 ml
topping:
coriander
scallion
bean sprouts
cucumber
carrots
red (chili) pepper
Spicy Chewy Noodles (Jjolmyeon: 쫄면)

1/2 cup chicken stock
1/2 cup soy milk
1/2 teaspoon salt
Spicy Beef Topping

10 grams garlic (1 large clove, grated)
8 grams ginger (small knob, peeled & grated)
1/2 teaspoon ground Sichuan pepper
2 teaspoons sugar
150 grams ground beef
1 tablespoon miso
1 tablespoon doubanjiang
1 tablespoon oyster sauce
For Serving Udon
2 servings udon noodles
1 scallion (greens thinly chopped)
1 teaspoon toasted sesame seeds
2 teaspoons chili oil (to taste)
