How To make Cold Dilly Beans
1 pound fresh green beans
stem ends trimmed
2 cloves garlic :
peeled
cayenne pepper -- to taste 3 large sprigs fresh dill
1 1/4 cups cider vinegar
1 1/4 cups water
2 tablespoons coarse salt
Blanch beans in boiling water until tender but still crunchy, about 3 - 4 minutes. Drain and run under cold water immediately to halt cooking.
Place 1 one clove garlic, cayenne to taste and 1 1/2 sprigs dill into each of two sterilized pint jars. Pack beans upright into the jars, to fit within 14" of the rim. In a non-reactive saucepan, bring vinegar, water and salt to a boil; pour hot liquod into the jars leaving 1/4" head space. Seal and proces the jars in a boiling-water barth for 5 minutes.
Store for at least 2 weeks in a cool, dark place before eating. Serve cold from the refrigerator.

Fermentation is a wonderful preservation method that allows you to put up a large amount of food in a very short period of time. Because we experienced a hard freeze a bit early this year, we needed to preserve a LOT of green beans all at once!
In this video, Carolyn shares our favorite fermented pickled green bean recipe that we call Pizza Beans. By adding ingredients like garlic, oregano, and diced tomatoes, our pickled green beans have a slightly pizza-like flavor that we all love!

Canning Dilly Beans!
Canning Dilly Beans. Fresh picked from our gardens. We use 1.5 pint jars due to the height.
We use a stainless steel Victorio brand multi use canner.
2 pounds of beans needed to make 4 1.5 pint jars.
This video was made during a thunderstorm- lost power so had to piece together segments.
Jars used 1.5 Pint jars They are taller than a pint and can take some of the longer beans. If you do not have these, you can use pint jars. You might have to cut down some beans to fit in jar.
Tips: Using fresh, crisp beans make the best dill beans. We use beans that are between 4-5 inches, about as round as a pen, and have a snap to them.
Remember to remove tips and wash well before processing.
Pack jars as tightly as possible. Use small, tender beans to fill in some of the head space. Or snap some beans f your beans in half!
Recipe: minimum of 2 pounds of beans
1/2 tsp red pepper flakes
1 Tbsp Mustard seeds
3 Tbsp Dill seeds
1 whole clove of garlic per jar
5 Cups White Vinegar
5 Cups Water
1/2 Cup coarse Salt
This is the recipe we followed in video, but made substitutes:
1/2 tsp Peppercorns
1 tsp chopped garlic per jar
4 Cups White Vinegar
1 Cup Apple Cider Vinegar
You can use up to 4 heads of Fresh garden Dill- ours wasn’t ready yet.
Make the pickling brine:
In a medium pot, combine the salt, vinegar, and water. Bring to a boil, and then reduce the heat and simmer (180˚F) for 10 minutes. Add in spices at the top of recipe( pepper, mustard seeds, dill seeds) Keep the brine warm.
- Process jars in canner to get the hot and ready for beans. Once ready, pull jars from pot, & place in garlic clove.
- Pack in beans as tight as possible, pour brine in jars to within 1/4 inch of top. Wipe off top of jar- place on seal and screw on lid.
- Process for 10 minutes in canner when water is boiling.

Do you want to tasty some amazing green beans? This spicy dilly beans recipe is so easy to make. There is nothing like eating a pickled green bean, fresh from the garden. It is a favorite around our house.
