How To make Cold Sweet & Sour Soup
3 oz Olive oil
7 oz Onion, chopped
10 1/2 oz Cabbage,chopped
10 1/2 oz Tomatoes, chopped
1 pt Water
3 1/4 oz Lemon juice
4 tb Honey
3 1/4 oz Orange juice
1 oz Tofu balls
Heat oil & saute onions till translucent. Add cabbage & saute 5 minutes more. Add tomatoes, water, lemon juice, honey & simmer for 15 to 20 minutes. Season with salt & pepper & remove from heat. Pour soup into food processor & puree to a smooth consistency. Refrigerate for 6 to 8 hours. Before serving, blend soup with orange juice. Place tofu balls in a dish & pour soup over the top. Hot and Sour Soup
Serves 4
Ingredients
4 - 6 dried shiitake mushrooms
1 oz dried black fungus (wood ear mushrooms)
For the Pork
2 oz lean pork, cut into thin strips
1/2 tsp shaoxing wine or water
1/2 tsp soys sauce
1/2 tsp cornstarch
1/4 tsp white pepper
For Soup
5 cups chicken stock
1/4 cup soy sauce
1/4 cup white vinegar or Chinese black vinegar
3 Tbs cornstarch
1/2 tsp white pepper
1/4 tsp sugar
1 tsp grated ginger
2 oz carrot, julienne
4 oz bamboo shoot, julienne
2 eggs, beaten
8 zo silken tofu, remove outer skin and cut into strips
Garnish
Chopped green onion / cilantro
Sesame oil

Sweet & Sour Veg soup
Ingredients
Chopped Cabbage - 1 cup
Chopped Carrot - 1 cup
Chopped Green Bell peppers - 1/2 cup
Chopped Yellow Bell peppers - 1/2 cup
Chopped Spring onion
Chopped Celery
Chopped Garlic cloves
Green Chili - 2 no
Sugar - 2 tbsp
Salt to taste
Pepper - 1 tsp
Corn flour - 1 tbsp
Soy sauce - 2 tsp
Water - 3 cup
Olive oil - 1 tbsp
Method:
1. In a Deep wide pan add olive oil, green chilli, garlic & saute it for a minute.
2. Add all the chopped vegetables one after the other Spring onion, Cabbage, Carrot, Celery, Green Bell pepper, Yellow Bell pepper & saute it for a few minutes.
3. Now add Salt, Pepper, Sugar & mix it. Add enough water to cover all the vegetables. You can add vegetable stock also. Let it boil for a few minutes.
4. Dilute corn flour in a water, it acts as a thickening agent, so pour it in the soup and mix it.
5. Add Soy sauce, Spring onion stock & turn off the stove.
6. The wholesome Sweet & Sour Veg soup is ready to serve.

Crushed Ginger (ഇഞ്ചി ചതച്ചത്) - 1 Inch Piece
Crushed Garlic (വെളുത്തുള്ളി ചതച്ചത്) - 2 Cloves
Chicken (ചിക്കൻ) - 200 gm
Salt (ഉപ്പ്) - ½ + ½ Teaspoon
Crushed Black Pepper (കുരുമുളക് ചതച്ചത്) - ½ + ½ Teaspoon
Egg (മുട്ട) - 1 No
Corn Flour (ചോളം പൊടി) - 2 Tablespoons
Refined Oil (എണ്ണ) - 1 Tablespoon
Finely Chopped Garlic (വെളുത്തുള്ളി ചെറുതായി അരിഞ്ഞത്) - 1 Tablespoon
Spring Onion Bulb (white part) - 3 Tablespoons
