How To make Colonial Seed Cake
2 oz (1 jar) poppy seeds
3/4 c Milk
3/4 c Soft butter (1 1/2 sticks)
3 Eggs
1 1/4 c Sugar
1 ts Vanilla
2 ts Baking powder
2 c Sifted all-purpose flour
10X sugar
1>. Combine poppy seeds and milk in a large bowl. Let stand at room
temperature 3 to 4 hours. Let eggs and butter warm to room temperature for easy mixing. (Butter should be VERY soft) Grease and flour an 8 1/2 x 4 1/2 x 2 1/2-inch pan. Preheat oven to 3500F. 2>. Add butter, eggs, sugar, vanilla, baking powder and flour to poppy seeds and milk. Beat at medium speed with electric mixer for 1 minute, scraping side of bowl. Pour into prepared pan. 3>. Bake in 3500F oven for 1 hour and 15 minutes or until center springs back when lightly pressed with a fingertip. Cool in pan on a wire rack for 5 minutes. Loosen around edges; turn over to cool. Sprinkle with 10X (confectioner's) sugar. Serve plain or with whipped cream.

Most Amazing, Super Moist Carrot Cake - Colonial Pecan Carrot Cake - Got Carrots To Use Up Make This
My garden plot this year had a bumper crop of carrots. I waited until the end of October to harvest them and they by that time were pretty big. A quick way to use them up is to make a carrot cake. So that is what I did. I made mom's colonial pecan carrot cake with cream cheese frosting. The next time you find yourself with a bag of carrots that you forgot about in the refrigerator make a carrot cake and don't they them go to waste.

Pre heat oven to 325°
Shift together in a bowl 1 cup flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon baking soda, 1/2 teaspoon salt.
Chop 1/2 cup pecans, and grate 1 1/2 cup carrots and set aside.
In a large bowl mix 1 cup sugar and 2/3 cup canola oil. Add 1/3 of the flour mixture beat and add 1 egg, beat again and then add another 1/3 of the flour mixture, beat, add 1 egg and beat, and beat in the last of the flour mixture. Add the carrots and pecans and beat until you have a nice batter.
Pour into buttered and floured cake pans and bake for 50 minutes or until done.
Let cool
For the frosting beat an 8 oz package of cream cheese with 8 tablespoons of butter. Slowly add in 3 cups of powdered sugar. Add in 1 teaspoon vanilla. Scrap down the side until completely combined. Frost cool cake and garish with 2/3 cup finely chopped pecans on the side of the cake. If you are like me, you will have cake crumbs in the frosting and this will hide them.
