• 2 medium roma tomatoes diced
• 1 medium red bell pepper diced
• 1 large avocado diced
• 1/2 small red onion minced
• 1/2 cup freshly chopped cilantro
• 1/4 cup lime juice
• 1/4 cup extra virgin olive oil
• 2 cloves garlic minced
• 1/2 teaspoon salt
• 1/2 teaspoon red pepper flakes

Spicy Black Bean Salad
Makes: 4-6
Ready in: 30 min
Ingredients:
(For the dressing:)
1 lime, zested and juiced
1 teaspoon dried cilantro
2 teaspoons olive oil
Salt and pepper
(For the salad:)
2 15-ounce cans black beans, rinsed and drained
1 cup frozen corn kernels, defrosted
1 red pepper, diced
1/2 red onion, diced
1 large tomato, diced
1 avocado, diced
1 small jalapeño, seeded and minced*
Instructions:
1. Combine lime zest, juice, cilantro, olive oil, salt, and pepper in a small bowl and set aside.
2. Cut all other vegetables before the jalapeno.
*To safely cut a jalapeño: Put on latex gloves and slice the pepper in half lengthwise. Pull out and discard the rib and seeds of the pepper—that’s the spiciest part! Slice the pepper into strips, then chop finely. Wash cutting board while wearing gloves, then throw out gloves. Wash hands thoroughly.
3. Combine beans and vegetables in a large bowl. Toss with dressing.

Ingredients:
For Dressing:
2 tbsp extra virgin olive oil
fresh coriander leaves - roughly chopped
3 cloves of garlic - finely minced
2 tsp dried oregano
3 tbsp lemon juice
3/4th tsp cumin powder
1/4 tsp chilli flakes
For Salad:
200 gms lettuce
tomatoes - chopped
corn
1/2 cup kidney beans - boiled
1 avocado
spring onion
Method:
To make the dressing:
- In a small glass, add the extra virgin olive oil, fresh coriander leaves, minced garlic, dried oregano, lemon juice, cumin powder and chilli flakes and whisk all the ingredients well.
To make the salad:
- Roughly chop the lettuce into bite-sized pieces.
- In a bowl, add the lettuce, chopped tomatoes, corn, boiled kidney beans, avocado, spring onion and little dressing and toss the ingredients.
- Keep adding the dressing as you toss the salad through.
- The delicious Mexican Salad is ready to be served.

SANTA FE BLACK BEAN AND CORN SALAD:
4 cups cooked black beans (or canned, drained)
2 cups frozen corn (or leftover corn on the cob)
1 large jicama, peeled and chopped
1 red bell pepper, chopped
1 green pepper, chopped
1 red onion, thinly sliced
1 pt. cherry red tomatoes (halved)
Combine salad ingredients in large bowl. Combine dressing ingredients in small bowl. Pour over veggies and toss. Refrigerate overnight (or 4 hours) for flavors to blend. Place in serving bowl and garnish with fresh cilantro and lime twists,

1⁄4 cup lime juice (preferably fresh) 1⁄2 cup canola oil
1 tsp. ground cumin
