How To make Corn Bread Taco Bake
1 1/2 lb Ground beef
1 pk Durkee taco seasoning
1/2 c Water
1 cn Whole kernal corn, drained
12 oz. size
1/2 c Green pepper, chopped
1 cn Tomato sauce 8 oz.
1 pk Corn muffin mix 8 1/2 oz.
1 cn Durkee French fried onions
2.8 oz. size
1/3 c Cheddar cheese, shredded 1oz
Brown meat; drain. Stir in next 5 ingredients; pour into a 8x12 inch baking dish. Prepare corn muffin mix according to package directions, except add 1/2 can French Fried onions. Spoon around outer edge of casserole. Bake,
uncovered, at 400 degrees for 20 minutes. Top with remaining onions and cheese. Bake for 2 to 3 minutes longer. Randy Rigg

The nice thing about this recipe is that everything goes into a 9 x 13 baking dish and out pops this amazing dinner. Just serve it with a side salad, a little salsa and a dollop of sour cream and maybe a margarita and dinner is served!

Cornbread Taco Bake -- Cornbread Based Taco Inspired Casserole
Cornbread Taco Bake
Ingredients
7 ounce packet cornbread mix
½ cup milk
1 large egg
1 pound ground beef
3 Tablespoons taco seasoning (or 1 packet)
⅓ cup water
11 ounce can Mexicorn, drained
10 ounce can Rotel, drained
2 cups sour cream (see my notes below)
2 cups shredded Mexican cheese blend (divided use)
½ cup chopped green onions
OPTIONAL TOPPINGS:
shredded lettuce, sliced olives, diced tomatoes, taco sauce
Instructions
Preheat oven to 350f degrees. Spray a 9x9-inch (or 2 1/2 quart) baking dish with nonstick cooking spray.
Combine cornbread mix, milk and egg. Stir well.
Pour batter into prepared baking dish and bake for about 15 minutes.
Meanwhile, cook and crumble ground beef until no longer pink, drain excess grease.
Then add in taco seasoning and water and stir to combine.
Then add in Mexicorn and Rotel. Stir well and simmer for a couple of minutes.
Once cornbread is cooked, take out of oven, then cover with ground beef mixture.
Next, combine sour cream with ONE cup of shredded Mexican cheese blend and green onions in a bowl.
Gently spread the sour cream mixture on top of the ground beef mixture.
Sprinkle the top with the remaining cup of shredded cheese.
Bake for about 25 minutes until heated through and cheese is melted.
Allow to cool for a few minutes. Slice and serve with optional toppings of: shredded lettuce, sliced olives, diced tomatoes, taco sauce

Taco Cornbread Casserole! Simple Recipe.

1 lb hamburger meat
1 taco seasoning packet
1/2 cup chopped onion(optional)
8 oz sour cream
1 cup 4 blend shredded cheese
lettuce
tomato
cornbread mix
Preheat oven to 350. Spray an 8x 8 baking dish. Mix the cornbread mix according to package. Pour in baking dish and bake for 15-20 minutes. While the cornbread is baking, brown the hamburger and onion in a medium skillet. Drain any excess grease. Season with Taco seasoning mix and 2/3 c water. When the cornbread comes out of the oven, scoop the hamburger mixture on top. Mix the sour cream and 3/4 c of the cheese and spread on top of the meat. Bake for 15 minutes. Remove from oven and top with lettuce, tomato and the rest of the cheese.
