How To make Country Creamed Chicken
3 half boneless chicken breasts
skinned and cubed
1/2 teaspoon thyme :
optional
1 Tablespoon oil
1 can (10 3/4 oz.) cream of chicken soup
1/2 cup milk
1 can (14 1/2 oz.) cut green beans -- drained
Saute chicken and thyme in oil 5 minutes or until chicken is cooked.
Blend soup with milk, add to skillet with vegetables. Heat through.
Serve over hot buttered noodles or mashed potatoes and garnish with chopped parsley if desired. Serve with hot biscuits or bread, if desired. Makes 6 servings.

Our weatherman is calling for a winter storm to move in later in the day. That's all it took for me to hunker down at home and start cooking.
Creamed Chicken
6 T. butter
6 T. flour
diced onion and celery to taste
Melt in large dutch oven and cook until bubbly. Slowly add in 2 cups well seasoned chicken stock and 1 cup milk or half-n-half, salt and pepper. Bring to a boil and cook 1-2 minutes until thick. Add chicken and any other seasonings you like. Serve over mashed potatoes. Scrumptious!!
Instant Pot Mashed Potatoes
Peel and cube potatoes for your family size. Place in IP with 1 cup water. Set pressure to high for 5 minutes. Let naturally release for 10-20 if you have the time. Pour out some of the water. Add butter and milk; mash until smooth and creamy. Season to taste.

INGREDIENTS:
For the Roux:
2 tablespoons oil
2 tablespoons unsalted butter
4 tablespoons all-purpose flour
1- cup reduced-salt chicken stock
For the Soup:
2 tablespoons unsalted butter
2 tablespoons oil
4-6 carrots peeled and cut into 1/8” slices
2 celery stalks cut into 1/8” slices
1 medium yellow onion diced
1 garlic clove minced
3 cups reduced-salt chicken broth
¼ cup dry or semi-dry white wine; a good drinking wine
3½ cups milk cream or half and half (or a mixture of cream and skim milk)
2 tablespoons chicken base granules or chicken cubes
½ teaspoon freshly cracked black pepper
1 tablespoon dried parsley or 2 tablespoons minced fresh parsley
3 dried bay leaves
1½ teaspoon Herbs de Provence
1/2 teaspoon turmeric optional
½ teaspoon paprika optional
¼ teaspoon red pepper flakes optional
4-5 cups cooked chicken cubed or shredded – rotisserie chicken works well, but do NOT use smoked chicken.
Garnish: Shredded Gruyere cheese

For Spice Mixture
1 inch cinnamon stick
4 green cardamom pods
