Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Primitive Cooking - Campfire Beef Stew & Corn Bread Recipe - Survival Cooking
Primitive cooking. Cooking beef stew, corn bread and corn on the cob over a fire in the woods. The beef stew was made from scratch, including making beef bone broth. Here are the recipes:
BEEF STEW RECIPE
Put beef bones, carrots and onion some salt and pepper in dutch oven and roast for about 1 hour or until bones are browned.
Transfer contents of dutch over to big campfire pot and cover with water. Add beef rib sections and simmer or boil for 5 hours.
Strain liquid over cheese cloth or fine mesh strainer and pick all meat off bones. Season meat with salt and pepper and set aside. Put strained broth back in kettle and boil for several hours and reduce broth until it is creates a strong beef flavored broth.
Cube chuck streak, season and brown in cast iron. Add flour until juices thicken to gravy. Then add remaining broth and add garlic, jalapenos and potatoes. Bring to a boil then add rosemarry, sage, and basil, bay leaves, pepper corn, carrots, ocra, green beans
green onions, red onions in that order. Cover and bring to a boil for 5 to 10 minutes or until potatoes are soft. Remove herbs and then simmer until ready to eat. If broth has not thickened, continue to simmer or stir in some more flour. Add chopped cilantro before serving.
CAMPFIRE CORNBREAD
1 part all purpose self rising flour and 4 part fine corn meal (yellow or white) A teaspoon of salt, cayenne pepper to taste, 4 eggs, 3/4 stick of melted butter. And then add buttermilk until the batter flows freely.
Pour mixture into hot dutch oven coated in butter with small pool of butter in bottom. Bake until outside is golden brown and poke center with stick and see if batter sticks to it to test whether it is done. Take about 30 - 40 minutes to bake.
CAMPFIRE CORN OF THE COB
Put whole corn on hot coals and flip them until the outside is blacken. About 10 minutes of cooking....Delicious

While I have to admit this is not a Full Breakfast Fry Up, it is as close as I can get here in the States. Skillet roasted potatoes, eggs, bacon, breakfast sausage, tomatoes, mushrooms and baked beans create this whole meal! It really does give you all the sustenance you need (until 2nd breakfast). 1 DOUGH 3 LOAVES | The Easiest (Actually Good) Bread You Can Make
In this video I'll show you how to make three versions of easy rustic bread using one simple dough. Take your pick! All of these loaves are beginner friendly and with a few small variations on shaping and baking, you're left with a rustic, crusty, bread worthy of your dinner table. No mixer or sourdough starter required.

INGREDIENTS:
****TO MY FRIENDS IN EUROPE/UK: The all purpose flour that i typically use is King Arthur which is about 11.7% protein. Your All Purpose flour may be different than what's available in the US. If in doubt, choose a flour that has between 11-12% protein and you should be in good shape!
ALSO if you have never made bread before, this dough is 78% hydration and will be slightly sicky. Use 75 less grams water in the final dough and it will be much easier to handle.
PREFERMENT (POOLISH)
150g or ROUGHLY 1 C. AP FLOUR
150g or ROUGHLY 2/3C. WATER (ROOM TEMP)
1 small pinch YEAST
- let the poolish ripen on counter 4-24 hours, preferably at least 16
DOUGH
280g or 1 1/4C.WATER (98F)
2g or 1/2 TSP YEAST
ALL OF THE POOLISH
350g or 2 1/4 C. AP FLOUR
50g or ROUGHLY 1/3 C. WHOLE WHEAT FLOUR
10g or roughly 1.5 TSP KOSHER SALT
BAKING TIMES/ TEMPS
METHOD 1: 525 the whole time for 14-18 minutes (spray loaf for steam)
METHOD 2- Preheat Dutch Oven at 500 for 30-40 minutes, bake at 500 covered for 12min and 485 uncovered for additional 8-12 depending on oven and desired color.
METHOD 3: Preheat Dutch Oven at 485-500 for 30-40 minutes, bake at 485 covered for 18 minutes, and 485 uncovered for additional 25-30 depending on oven and desired color.
