Jiffy Tamale Pie With Ground Beef | Easy Dinner Recipes | Cooking Up Love
Jiffy Tamale Pie is a delicious Texas tamale casserole filled with layers of Jiffy cornbread and cheesy taco spiced ground beef using ingredients you probably always have. It’s simple to make, feeds a bunch of people and it’s full of tamale inspired flavor. And it’s even better when it’s smothered with our homemade queso sauce!
Jiffy Tamale Pie with Ground Beef Ingredients
1 lb ground beef
1 tablespoon oil
1 tsp baking soda
2 tablespoons water
1 tsp Better Than Bouillion
1 1/2 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon cornstarch
1 tablespoon water
salt and pepper to taste
1/2 cup water
about 1 cup shredded cheddar cheese
Cornbread Ingredients
Jiffy Corn Muffin mix
1 egg
1 tablespoon melted butter
1 can cream corn
1/2 cup milk
1/4 cup flour
1/2 cup shredded cheddar cheese
Homemade Queso Ingredients
1 tablespoon oil
1/2 onion, diced
1 jalapeno, seeded and diced
1 tablespoon cornstarch
1 tablespoon water
1 cup milk
about 8 oz melting cheese (I'm using Velvetta, cubed)
salt to taste (I'm using 1/2 teaspoon)
1/2 teaspoon cumin
Jiffy Tamale Pie With Ground Beef Directions
Begin by preheating the oven to 400 degrees. Next we’re going to tenderize ground beef. Mix up a slurry, ½ tsp baking soda with 1 tablespoon water, and sprinkle it over 1 pound of ground beef and stir to combine. Then mix up another batch of slurry (½ teaspoon baking soda and 1 tablespoon water) and stir it in. Let this sit for about 5 minutes.
Heat a large skillet over medium heat, and add a tablespoon of oil. Add the ground beef, and stir to break it into small pieces. Cook until it’s soft, then add the spices:
1 teaspoon better than beef bouillon
1 ½ tablespoon chili powder
1 tsp garlic powder
1 tsp onion powder
½ tsp cumin
Mix this all together and continue to cook the ground beef a few more minutes until it’s done. Add salt to taste, I’m adding ½ tsp. Next, make a cornstarch slurry using ½ teaspoon cornstarch with 1 tablespoon water. Add a ½ cup water to the ground beef and heat to a simmer. Then add in the cornstarch slurry, stirring and cooking until the mixture thickens.
Add 1 cup shredded cheddar cheese, and stir into the ground beef mixture to melt, and remove from heat.
Next to make the cornbread. We’ll mix up the Jiffy corn muffin mix; you can also use your favorite homemade cornbread recipe for this. Beat one egg, add one box of jiffy corn muffin mix and 1 tablespoon melted butter. Add ½ cup of milk and 1 can of cream corn, then mix until well blended. Add in 1/2 cup of shredded cheddar cheese and stir. Add ¼ cup flour and stir to blend.
Grease a 13x9 inch baking dish with butter, then spread a layer of cornbread mix on the bottom. Layer on the ground beef mixture. Then pour on the remaining cornbread mix, trying to distribute it evenly across the top. You could also add on some extra cheese on top before popping it into the oven. Bake in the 400 degree oven for about 25 minutes, until the top is set and golden brown. Then remove from the oven, and let it set for about 10 minutes.
Homemade Queso Directions
Dice one half onion and one seeded jalapeno pepper. Saute with one tablespoon of oil over medium heat until softened. Make a cornstarch slurry, mixing one tablespoon cornstarch with about one tablespoon milk. Pour one cup of milk into the sauteed vegetables, and heat. Add the cornstarch slurry, and cook to thicken. Add about 8 oz of melting cheese, I’m using Velvetta cut into cubes to help it melt faster. Cook over medium heat, stirring to melt. Salt to taste, I’m adding ½ teaspoon, plus ½ teaspoon cumin. Stir to blend and hold over low heat until ready to serve.
And that's how easy it is to make Jiffy Tamale Pie! Hearty layers of cheesy cornbread… cheesy tamale beef filling… topped off with homemade our creamy, spicy queso…. So delicious!!

TAMALE PIE | Ground Beef & Cornbread Casserole
Today, I am combining jalapeno cheddar cornbread and ground beef enchilada filling to create a delicious tamale pie recipe. This is not a pie nor a tamal, but it is a tasty cornbread casserole bake.

INGREDIENTS
2 Tbsp oil
1 lb (454 g) lean ground beef
1 beef bouillon cube
1 1/2 to 2 Tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
2 Tbsp (20 g) all-purpose flour
salt and pepper to taste
8 fl oz (236.5 ml) water
1 1/4 cup (125 g) shredded cheddar cheese
CORNBREAD MIX
1 cup (130 g) yellow cornmeal
1/2 cup (65 g) all-purpose flour
1 Tbsp (15 g) baking powder
2 Tbsp (25 g) sugar
1/2 tsp salt
1 large egg
1 Tbsp (15 ml) cooking oil
14.75 oz (418 g) can of creamed corn
1/2 cup (118 ml) milk
1 to 2 large jalapeños diced
1/2 cup (50 g) shredded cheddar cheese
*Buttered 2.7 qt rectangular baking dish*
*Bake at 400 degrees F / 204 degrees C for 22 to 25 minutes
*Once baked, allow to set for 10 minutes, then serve

You can add jalapeños to the cornbread mixture if you'd like. I did not add jalapeños because I was giving this to my five-year-old son and he does not eat hot stuff.

How to make Hot Tamale Pie
This is good dish that usually pleases the family. Here is a tip or two. For a juicier pie pour a smaller amount of juices off of the meat and add some chicken broth or water into the meat which makes for a wetter meat sauce. and also use a thinner layer of masa and oh! and dont forget the cheese. smiles Mine was good but I want yours to be great! Tamale Pie
Ingredients:
1 box of Jiffy Corn Bread Mix
1 egg
1/3 C of milk
1 lb. of ground beef (80/20 or leaner)
A few shakes each of garlic powder, onion powder and black pepper
A few pinches of salt
1 15.25 oz. can of whole kernel corn, drained
1 15.5 oz. can of red beans, drained
2 6 oz. cans of sliced black olives
1 10 oz. can of enchilada sauce
1/2 of a white or yellow onion, chopped
Directions: Preheat oven to 400 degrees. In a medium bowl mix corn bread mix, egg and milk until combined and set aside. In a large deep skillet over medium high heat, brown ground beef with onions. Add the rest of ingredients and cook for an additional 5 minutes. Take a 9 x 9 baking dish and spray with non stick cooking spray without the flour. Pour contents of skillet into baking dish and level out. Spoon cornbread batter over tamale mixture to cover and bake for 20-25 minutes until golden brown.
