How To make Crabs Carribbean Style
8 tb Butter
4 Scallions chopped
1 ts To 2 ts chopped garlic
1 Hot green chili, finely
-chopped and seeded (or use dried red pepper -flakes) 1 tb Curry powder
3/4 To 1 lb crab meat, shredded
2 tb Chopped fresh coriander
-leaves, if possible 2 tb Finely chopped parsley
Salt nd freshly ground -pepper 6 tb To 8 tb crab liquid or clam
-broth 2 c Bread crumbs
Melt butter in skillet; add scallions, garlic and chili peppers and cook until scallions are wilted. Add curry powder to this mixture and blend thoroughly. Add crab, coriander and parsley. Add salt, pepper and crab liquid (if more is needed, add melted butter). Blend in bread crumbs. Fill the mixture in 8 clam shells and bake at 400 degrees F about 10 minutes or until browned. 1 cup diced bell peppers
1 cup diced onions
2 tbsp minced garlic
thyme
Chopped scallions
Chopped parsley
Chopped cilantro
1/3 cup bread crumbs
1/3 cup seafood stock

2 tsp old bay seasoning
1 tsp complete seasoning
1 tsp garlic powder
1 tsp onion powder

JAMAICAN HOME COOKED LAND CRAB (CURRY/RUN DOWN/OYSTER)
Its crab season!! Land crab season in Jamaica is any month that doesn't have the letter R in it. Mark and his Mom Mrs. Pam March run a catering company from. their home and during crab season they prepare land crab. The don't just prepare it though, it is cooked with lots of love and lots of fresh Jamaican spices.
The crab is prepared three ways curry, run down and in oyster sauce. It was a real joy to see a mother and son enjoy the kitchen and the love of cooking. The synergy between them speaks for itself when you taste the food coming out of their kitchen!
