How To make Cranberry Oat Muffins
1/2 c Chopped cranberries (raw)
-OR- blueberries 1/4 c Honey or maple syrup
2 tb Unrefined vegetable oil
3/4 c Orange juice
1 c AM Oat Bran
1 c AM Whole Wheat Pastry Flour
1 tb Non-alum baking powder
(Yield: 12 large or 24 mini-muffins) Place berries, honey, oil, orange juice in blender and blend slightly. Mix dry ingredients. Add liquid to dry and mix. Fill oiled muffin tins and bake at 400 F. for 20 to 25 minutes or until nicely browned. The smaller muffins rise better. Pumpkin Cranberry Oat Muffins/Bread with Streusel topping!

RECIPE:
Combine all dry ingredients in Part A. (as shown in the video)
Part A:
1-1/2 cup All Purpose Flour
1 cup ground Oats (grind them in the food processor or blender; small pieces are ok)
1 tbsp Baking Powder
1/2 tsp Baking Soda
1 tsp Pumpkin Pie Spice
1 tsp Cinnamon
1/2 tsp Salt
1/2 cup Dry Cranberries (to be added on top of the dry; check video)
PART B: Combine all wet ingredients, including brown sugar (as shown in the video):
3/4 cups Brown Sugar
1/3 cup Vegetable/or Canola Oil
1 Egg
1 cup canned Pumpkin puree
1 tsp Vanilla
3/4 cup Milk
Follow video instructions.
I made a double batch which yielded 6X3.5inch muffins using 7X7inch parchment squares as cups, and one 5X9 inch loaf lined with parchment (no greasing necessary, but do line the bottom with parchment. Run a knife around sides of loaf to remove it from the pan). You can make 12 smaller muffins out of one batch also instead of 6 big ones. Baking time depends on the size. Start with 1/2 hr for the muffins @ 325F and keep checking with a toothpick. My muffins here are big so they took about 45-50min. The loaf also was big so it took about an hour. Always check with a toothpick. Let cool completely!

PUMPKIN PIE SPICE MIX RECIPE:
I always make my own pumpkin spice mix because i use a lot of it every season. Here's my recipe that i usually make X 2 at a time.
4 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground cloves
1 tsp ground nutmeg
Combine everything in a jar and shake away or use a whisk, stir to combine. Store in a glass jar!

BANANA CRANBERRY OATMEAL MUFFINS
How to make banana cranberry oatmeal muffins. This recipe is easy simple, healthy and delicious. You can make this in less than 30 minutes.
Ingredients
- 3 cups Oatmeal (quick 1 minute oat)
- 3 bananas
- 2 eggs
- 1/2 cup cranberries
- 1 Tbsp. unsalted butter
- 1 tsp baking powder
- 1 apple sauce cinnamon
- 1 tsp sugar vanilla or vanilla extract
In large bowl, combine bananas, eggs, apple sauce cinnamon, unsalted butter, sugar vanilla, baking powder and Oatmeal. Mix together until everything is incorporated.
Preheat oven at 350 degrees.
In a 6 muffins pan, place cup cakes liners. Start by filling them equally and pop it in oven for 20-25 minutes or until golden and brown.
Remove from the oven and serve this yummy breakfast muffins.
