How To make Cream Cheese Pancakes
2 Eggs
5 ts All purpose flour
1 1/2 ts Sugar
1 ts Butter, melted
8 oz Cream cheese, softened
Lightly beat eggs in large bowl. Add softened cream cheese, flour, sugar and butter. Mix until well combined. (Mix will be slightly chuncky). Spray a pre-heated 275 degree electric griddle with vegetable cooking spray and ladle butter by teaspoonfuls onto griddle. Cook pancakes until golden, about 3 minutes. Turn and brown other side about 2 minutes more. Sprinkle pancakes with confectioners sugar and garnish with lemon wedges. Serve with fresh berries, warm applesause, or maple syrup.

pinch of salt
splash of Vanilla
Instructions:
Heat a non-stick skillet or griddle over medium heat and spray with cooking spray
Combine all ingredients in a blender and pulse until mixed
pour enough batter to make each pancake approximately 4 inches across
Brown on both sides and serve hot with sugar free syrup

These keto cream cheese pancakes are sugar-free, nut-free and super soft and moist. By using coconut flour (which is a drupe, not a nut) these pancakes are suitable for those following a low carb ketogenic diet.
WHY ADD CREAM CHEESE TO PANCAKES?
Keto pancakes are all too often dry and stiff. They tend to be made from flour which doesn’t contain gluten, which makes them very fragile and breakable.
These pancakes, however, benefit greatly from the addition of cream cheese, which not only adds some additional fat to keep the mixture and final product soft, but also provides structure to the pancakes whilst cooking, and whilst eating.

When you think breakfast, you think pancakes. Keto pancake recipes that are easy to make and taste good are hard to find. My keto buttermilk pancakes are amazing; however, they require a little extra love. I used to only make keto pancakes on the weekends since they were more involved and required bowls and measuring spoons. These blender keto pancakes have changed my weekday breakfast game! My kids can enjoy pancakes and bacon in the mornings before they head to school. And because these keto pancakes are filled with healthy fats and protein, I know my boys won’t be hungry two hours later!
These Cream Cheese Pancakes are made using coconut flour, but you can substitute almond flour as well, just use 3/4 cup. I love coconut flour pancakes because they don't get that burnt appearance like almond flour. These easy keto pancakes are also gluten free!!

KETO CREAM CHEESE PANCAKE RECIPE:
8 oz Cream Cheese, softened at room temperature
½ cup coconut flour
¼ c Swerve, or other favorite sweetener
½ cup heavy cream, or keto approved milk of choice
2 teaspoon baking powder
1 teaspoon vanilla
4 Eggs
Add all ingredients in a blender and blend until combined. Pour onto a pre-heated and greased griddle or non stick pan. Cook on each side until brown.
Serves 8 (makes about 16 pancakes)
