Angelo's Mom Makes Chicken Thighs & Breast in Tomato Sauce and Spaghetti
This is pretty easy. You can follow along with the video and change the sides however you want. My mom likes to add things like potatoes or zucchini, too. The ingredients:
-Boneless chicken thighs and breasts
-Olive oil
-Tomato sauce
-Water
-Garlic cloves
-Salt
-Black pepper
-Cinnamon
-All spice
-Spaghetti
-Broccoli
-Lemon juice
-Feta cheese (I've begun to enjoy Hispanic cheese more)
Optional - Wine to add in to the tomato sauce when you cook the chicken.
Put some olive oil in a pot and put it on medium heat. Let the olive oil heat up a little bit, then put the chicken in there, moving it around regularly so it doesn't stick to the pot. Turn over the pieces of chicken occasionally and add black pepper while you're still frying them in the olive oil.
After a few minutes and the chicken is a little cooked, add the tomato sauce and water. You can add wine as well and cut down on the water. Add the garlic cloves, more pepper, salt, and a little cinnamon and all space and mix everything together. Turn the heat down and let it simmer for an hour.
Cook the spaghetti however you like and boil the broccoli for about three minutes. Add a little lemon or lime juice to the broccoli and virgin olive oil. I like to add garlic powder, too, which I've heard is good for your blood pressure.
And that's it. In the video I managed a trick shot with a grape that fell on the ground, though I didn't catch it all on camera. I picked it up with my toes and tried to toss it into the sink, but it hit the wall and went directly into a small tupperware container. And my dad awkwardly waited by the door to come inside.

Ingredients -
400g (14oz) - Spaghetti
1 Tbsp (20ml) - Olive Oil
1 1/2 Tbsp (21g) - Unsalted Butter
4 - Garlic Cloves, Thinly Sliced
1 - Whole Lemon, Zest Thinly Sliced
1/2 - Lemon, Juiced
1 Cup (250ml) - Thickened Cream
10g (0.35oz) - Curley or Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste
Notes -
This recipe is strong on lemon so adjust it to your taste. The first time I made it, I put way too much lemon juice in (I used 1 whole lemon) and it ruined the dish. I've now reduced it to half and I think it's the perfect balance. If you’re concerned, you can add the zest and cream and squeeze 1 quarter of a lemon into the sauce and adjust that way. Half a lemon works well though, so don’t worry.

Recipe Notes -
This dish is best when fresh, as the cream-based sauce can potentially split upon reheating. If you wish to store it, it will last two days in the fridge. I don't recommend freezing it.
This recipe is fantastic on its own but can also be served with all your favourite sides, such as mashed potato, pasta, rice and a wide range of vegetables.
The fresh herbs are optional, as well as the parmesan cheese, but they add incredible flavour. They can be substituted for their dried counterparts if you can't source fresh herbs. Use 1 tsp of dried parsley and 1/4 tsp of dried tarragon. The tarragon can easily overpower the dish if used too much. You can always add but can't take out, so adjust to your liking.
Cream alternatives will no longer make this dish the fantastic recipe that it is. Without cream, you'll need to add flour as a thickening agent, ruining the sauce's texture.
