مكونات
اغسل وانقع كوبين من العدس في الماء لمدة 30 دقيقة
في قدر نضيف البصل المفروم (250 جرام) مع القليل من زيت الزيتون ونقلبه حتى يتكرمل البصل
ثم تضاف المكونات التالية:
خمس فصوص ثوم (20 جرام).
كرفس (120 جرام)
حبتان من الجزر (150 جرام)
و ٣ حبات من الطماطم (٣٠٠ جرام)
يُصفّى العدس من الماء ويُضاف إلى القدر
ملعقة كبيرة من الكمون والكزبرة والفلفل الحلو وملعقة صغيرة من كل من الفلفل الأسود ورقائق الفلفل الحار
أوراق الغار
ملعقة صغيرة من كل من مرقة الملح والخضروات
عشرة أكواب من الماء الساخن
اطبخ الحساء على نار متوسطة لمدة 40 دقيقة
ثم أخرج أوراق الغار
يُمزج الحساء قليلاً
زينها بالكزبرة والبقدونس (10 جرام).
أضف القليل من قشر الليمون و 2 ملعقة كبيرة من عصير الليمون (30 مل) وبالعافية

Ingredients
Wash and soak two cups of lentils in water for 30 minutes
In a pot add the chopped onion (250 grams) with a little bit of olive oil and cook it until the onion caramelizes
Then add the following ingredients:
Five cloves of garlic (20 grams)
Celery (120 grams)
Two carrots (150 grams)
Three Tomatoes (300 grams)
Strain the water from the lentils and add it to the pot
One tbsp each of cumin, coriander, and paprika, and one tsp each of black pepper and chili flakes
Bay leaves
One tsp each of salt and vegetable bouillon
Ten cups of hot water
Cook the soup over medium heat for 40 minutes
Then, take out the bay leaves
Blend the soup slightly
Garnish it with coriander and parsley (10 grams)
Add a little orange zest and two tbsps of lemon juice (30 ml)

Arlene teaches Kez how to prepare a Trini classic, Stew Lentil Peas:
Ingredients
1lb Lentil Peas
½ cup Carrot- diced
½ cup Pumpkin- diced
1 cup coarsely chopped Chive
1/3 cup Pimento Peppers
¼ cup Garlic
½ cup chopped Celery
½ cup Brown Sugar
½ cup Veg Oil
¾ cup Ketchup
Method
In a large pot, boil lentils until its half way cooked (still firm at the center).
Strain out the water from the lentils.
Using a 9-inch pan heat vegetable oil and brown sugar on medium to high heat.
When sugar becomes fluffy and brown add lentils and stir thoroughly.
Add carrots, pumpkin, chopped seasoning and stir.
Add ketchup, stir, cover and allow to cook approximately 30 minutes or until peas are soft.
Add salt to taste.
When lentils are cooked completely, add chopped celery.

Homemade Lentil Soup Recipe
This delicious Lentil soup recipe is jam-packed with spices and caramelized vegetables to bring about an incredibly flavorful soup. This is one of the easiest-to-make most nutritious soups on my website and the taste is beyond amazing.
Lentils are a legume that is indigenous to the Mediterranean and Middle Eastern Countries. They are seeds of a plant that are jam packed with fiber, potassium and protein and make for a great meat replacement.
Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful including by adding them into soup. When other ingredients are introduced that compliment lentils like onions, garlic, spices, and lemon, the taste is out of this world.
There are many variations of lentil soup depending on where you live so do not be surprised if you see different ingredients in it. My version is much more of a Middle Eastern Lebanese style.

• 2 tablespoons olive oil, ghee, or clarified butter
• 2 peeled and medium diced yellow onions
• 2 peeled and medium diced carrots
• 2 peeled and medium diced ribs of celery
• 3 finely minced cloves of garlic
• 1 ½ teaspoons ground cumin
• 1 teaspoon ground coriander
• 3 cups green lentils, rinsed
• 1 large peeled and medium diced potato
• 2 bay leaves
• 9 cups chicken stock
• juice of 1 lemon

GET STARTED WITH THESE RECIPES ----*LIST OF INGREDIENTS*
2 cups of dry green lentils
1/2 teaspoon of cinnamon
7 cloves of garlic
2 onions
5 carrots (chopped in cubes)
2 whole Corn ( slide in all sides)
4 cups Veggie broth
1 bay leaf
1/2 tsp of cayenne pepper
1 tsp of lemon juice
1 whole Bell pepper
4 leaves of Kale(remove rough part)
1 stem of Italian parsley (Fresh)
2 yellow plantains( slide into pieces)
1/4 tsp Dried thyme stem
2tbsp of olive oil
Salt & pepper for taste

*INSTRUCTIONS*
In a large heated pot add 1 tbsp. of olive oil
Then add chopped kale, cinnamon and Stir fry for 2 minutes.
Remove from pot and place on the side
Use the same pot add garlic, onions and carrots until tender.
Add all other ingredients except sweet plantains and let everything come to a boil.
Lower the heat to medium and let it simmer for 25 minutes.
While the soup is boiling, in a separate pan add the other tbsp. of oil
Stir fry the yellow sweet plantains until they are caramelized and set aside.
Add in kale to boiled soup.
Let it simmer for 5 minutes and turn off fire.
Plate bowls.
Top off with fried sweet plantains and fresh parsley.

Lentils are from the Legumes family. They are very high in proteins, fiber, full of B vitamins and other minerals. They help keep the bad cholesterol (LDL) low and the good one (HDL) high. Also help the nerves, the glands etc..

Dans une grande casserole, mettre 1 cuillère d’huile d’olive.
Puis ajouter le chou frisé haché, la poudre de cannelle et laisser cuire 2 minutes tout en remuant. Enlever de la casserole et mettre à côté.
Utiliser le même récipient et y ajouter l’ail, les oignons et les carottes jusqu’à ce qu’ils soient tendres.
Ajouter tous les autres ingrédients à l’exception des bananes douces.
Porter à ébullition. Puis réduire le feu et laisser mijoter 25 minutes.
Pendant que la soupe est en train de bouillir, dans un autre poêlon mettre la cuillère d’huile restante et frire les bananes douces jusqu’à ce qu’elles soient caramélisées.
Les mettre à côté.
Ajouter le chou frisé à la soupe.
Laisser mijoter 5 minutes puis éteindre le feu.
Servir la soupe dans des bols et recouvrir des bananes mûres frites et de persil frais.

Creole Inspired Lentil and Okra Stew
Ingredients:
1 cup chopped onions (½ medium)
1 cup chopped red bell peppers (1 medium)
2 tbsp minced garlic (about 7 cloves)
½ tsp dried cayenne pepper
½ tsp dried thyme
½ tsp dried sage
½ tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tbsp Italian seasoning
2 cups crushed tomatoes
1 cup green lentils
5 1/2 cups frozen cut okra (or fresh)
4 ½ cups vegetable broth
2 tbsp hot sauce - not tabasco (optional)
Directions
1. Heat a heavy-bottomed pot over medium high heat.
2. Add onions and bell peppers to the pan. Stir constantly. Add a little broth, a
tablespoon at a time if needed, to prevent sticking. This process should take about 10
minutes.
3. When the mirepoix (onions and bell peppers) is tender, add the garlic and stir for
about a minute more.
4. Add a few tablespoons of broth, stir, and include the herbs and spices: cayenne pepper,
thyme, sage, smoked paprika, onion powder, garlic powder, and Italian
seasoning.
5. Stir in the tomatoes and stir for a minute or so.
6. Add ½ cup broth and okra; stir and simmer for 5 minutes, continuously stirring.
7. Add the rest of the broth and lentils. Bring to a light boil, stir, cover, and simmer on low heat for about 30 to 45 minutes until lentils are cooked to desired consistency, stirring occasionally.
8. Take a cup of the stew and blend for 2-3 seconds and pour back into the pot.
9. Stir and simmer for about 5 more minutes.
10. When done, the consistency should be similar to a thick, chunky gravy. Add additional
broth or water for a thinner consistency, if desired.
11. Serve over rice or a baked potato.
